will effectually prevent any injury from flies. While drying, the cheese ought to be frequently at first turned, and afterwards once a day, and well rubbed nith a clean clot!). The above process skilfully peformed will advance the price of cheese : No. 1 fiom G lo 8 cents; No. 2 lo 10; and No. 3 lo li'i cents per pound.
