Phyllis Roy found strength in adversity
| By MARY JANE LORTON Staff Writer “Out of every bad thing comes some kind of good," comments Phyllis Roy of Milford, “if you look for it (the good)." Speaking of the many personal hardships and just plain hard work she has faced in her own life, Phyllis says she made it over these hurdles becoming a stronger person as a result. Profile A Born ona dairy farm in Bourbon, Phyllis tells her days in the country taught her a lot. With 70 head of cow, 30 being milking, Phyllis says everyone worked to get the daily chores done. “I always knew how to work," she said, adding, at age four and a half she remembers being upset because “they went after the cows without me." During her early teenage years, Phyllis remembers her father getting a job in Indianapolis in the department of education. He asked the kids if they wanted to keep the farm, and “we kept it," she says. Just two boys and two girls. Phyllis says they all shared the work, keeping up the farm that meant so much to them all, The youngest of 10 children. Phyllis fondly recalls days when they were all on the farm. “I started cooking at age five," says Phyllis. Her father built a box for her to stand on in order to cook over the cookstove. By age 10. Phyllis-says she was baking bread from time to time. “I learned by shine and by feel when I was kneading it." Phyllis says, adding she did not use a recipe. She still does not use a recipe when she is cooking, unless she is baking a cake or cookies. “I cook like a painter." she says, adding, “whatever I have 1 put together and come up with something different everytime.” Cooking has not been particularly challenging for Phyllis.

although she does admit nowadays it is hard to cook for one person. A mother of seven children, and former restaurant owner, cooking for one has been an adjustment for Phyllis. “My dog eats well," she laughs. Whether it is for one person or several people, Phyllis loves to cook. And its this love of cooking that probably explains her 40 years in the restaurant business. “I love food." Phyllis says simply. “I love anything about it," she adds, “I don't care if it’s just cleaning celery.”

Former owner of La Madre Restaurant in Warsaw and The Chateau in Milford, Phyllis was known for her thick, creamy soups anddelicious pies. Although Phyllis enjoyed her work at The Chateau, she explains a serious back injury forced her to give up the restaurant about two years ago. “And I miss it,” she says. But Phyllis did not let this setback keep her down. By walking every day, Phyllis was able to rebuild strength in her back and legs and soon she was up and working once again. Rebuilding and starting over have been reoccurring activities in Phyllis's life. A widow for 30 years, Phyllis has seen to it that her seven children were all educated and doing well. “I don’t know where I got the energy to have kids in school and at home,” Phyllis says, adding, “but for those 18 years 1 never thought of being tired.” After her husband’s death in November, Phyllis recalls a very miserable Christmas. The next year she had a Christmas Eve dinner for her children and for others, “who couldn’t get home,” for the holidays. “I invited people to my home for that dinner every year after that until about 76 or 77, when I first had La Madre,” Phyllis tells. An LU. fan. Phyllis says she went to Indiana University at South Bend about 20 years ago. A student of criminal justice, Phyllis explains she wanted to work in the juvenile prison system to try to help the kids who were stuck there without a mother figure. An accident involving two semis brought an end to Phyllis’s studies, but not to her spirit. She kept going. Currently, Phyllis lives in Milford and works as the nutrition site director for REAL meals in Milford. A real believer in the benefits of the program, Phyllis says she loves this job and loves the people she comes in contact with. “Everyone needs friendship, and needs someone to care about them," Phyllis says. Having someone who cares contributes to one’s happiness and Phyllis maintains, “mental health is a big bearing on physical health.” Working nights at a restaurant in addition to her duties at the nutrition site, Phyllis stays quite busy. But she enjoys that fact. “If you're not busy, you stagnate," she says. Reflecting on her own life and speaking from her own experience, Phyllis maintains an optimistic view of life stating, “adversity can make you strong. . .or it can destroy you, depending on how you use it.”
