For ten years Bales Butcher Shop, in Syracuse, has provided the best service a butcher shop can offer by catering to the individual needs of the community. Owner Darrel Bales opened the store at 106 E. Main St. in September, 1978, after working for 20 years in the Goshen and Elkhart area for a national grocery store chain. Bales, who has been cutting meat since 1956, began his business with one employee, Elsie Nyikos, who still works at the shop as a specialty cook. When he first opened his store, Bales says, business was extremely slow. “When we started in 1978, we sold three to four chickens per week. Now we sell eight to ten cases in that same time-span.” Bales credits his success to hard work, quality service, and a unique shopping environment in

a day of large grocery stores and prepackaged food. Bales’ formula of quality service is this: “First, we do not prepackage our meat. This allows people to buy exactly what they want. Second, we are a butcher shop; our emphasis is on meat, not a full line of grocerys. Third, we only sell the best quality meats and seafood. Our poultry, shrimp, and some fish are sold fresh everyday. We also sell several lines of frozen fish, too. Our beef is aged to enhance the flavor and tenderness, and we even carry a wide assortment of ground meats. Finally, we freezer-wrap all the meat we sell, so customers do not have to go home and do it themselves.” (Continued on page 26)
