Pumpkins, pumpkins everywhere

Along with the arrival of colorful autumn leaves also appears bright, orange-yellow pumpkins. You see them sitting in large crates or lined up according to sizes in front of markets and grocery stores. Along most any country road you’ll see a sign, “Pumpkins for sale,” and also see creative displays of pumpkins in front of homes. Pumpkins are a rich source of vitamin A which promotes healthy skin, helps the body fight infections, especially of the respiratory tract. It also helps prevent night blindness and poor eye sight. The inside fleshy, edible part of pumpkins can be cooked by baking or steaming and is used for pies, as well as using it in breads, cakes, cookies, etc. Pumpkin seeds are high in phosphorus and protein. Phosphorus is necessary for the utilization of calcium and vitamin D. It is essential for healthy teeth and bones. Protein is known as our body’s building blocks. For children, the sight of these large, round, bright orange pumpkins adds excitement and anticipation of Halloween just around the corner. >

At our house, the carving of our pumpkins into jack-o-lanterns is a family event. Each of our three children has his own pumpkin to carve with the help and guidance of us of course. They especially enjoy picking through the strings to gather the pumpkin seeds. We always rinse off the seeds and then roast them. They are a delight, nutritional snack. Roasted pumpkin seeds — Spread on a baking sheet or shallow pan. Bake in a 350 degree oven for five-10 minutes until lightly brown. Can be stored in covered jar at room temperature out of direct sunlight. Pumpkin pie — Three eggs, one and a half cups pumpkin, cooked, one-third cup honey, one-half teaspoon salt, one teaspoon cinnamon, one-fourth teaspoon cloves, one-fourth teaspoon nutmeg, one and a half cups milk. Beat eggs, add pumpkin and honey, mixing well. Combine spices and salt with pumpkin mixture. Slowly add milk. Pour into prepared nine or 10 inch pie shell. Bake at 425 degrees for 15 minutes and then 325 degrees for 45 minutes. Sherry K. Landgraf Is a feature writer who lives in Elkhart. Microwave should be clean
A clean microwave oven interior is more than just attractive — it also ensures the best cooking performance from the appliance. According to home economists, infrequent cleaning may cause a number of problems. Cooking time may be slowed by a build-up of food particles on the walls or floor of the oven. Food soils absorb the microwave energy that should be used by the cooking food. Food particles around the door frame may keep the door from sealing properly or may event prevent the oven from starting.
