Leftovers of 1787
In honor of the 200th anniversary of the constitution, you may want to serve some foods from the 1787 era. Here are some suggestions from the US Department of Agriculture. A well-known dish in Philadelnhia taverns was nennerpot, containing tripe, stew meat, cayenne pepper, potatoes and dumplings. Vermont developed something called red flannel hash, made with beets, potatoes and steak. A popular dish in New England was Indian pudding or hasty pudding. It was made of milk, corn meal, molasses, ground cinnamon and ginger. Begin In NEW PARIS SEPTEMBER 15 "The Knowledge Alone Wos Worth The Cost Os The Course"

There were also hush puppies made of bits of dough fried in deep fat at the same time that fish were being fried. The hush puppies were thrown to the dogs to keep them quiet while the family was eating. Poached salmon with egg sauce and Maryland crab cakes are other reminders of our early days. In New England, a traditional Fourth of July meal is still. salmon, new potatoes and green peas. Succotash is a direct descendent of an American Indian dish of corn and beans called “sukquttahash.” In 18th century America, a pie was usually a main dish. It was a crust filled with meat, fowl or shellfish, or a mixture of these in a sauce or gravy. It was covered with a second crust and baked in an oven. Another favorite was any pastry filled with fruit, custard or other sweets. It was called a tart, regardless of its size. You might want to try Indian pudding. It always included corn meal and sometimes milk and/or eggs. It was sweetened with molasses and seasoned with cinnamon and cloves, cooled in a pot until thick and baked until firm. American cooks also used an English recipe called salmagundy from the French word for “hodge podge.” It was a combination of anchovies, chicken, potatoes, lettuce and eggs and served with a salad dressing and garnished with grapes or flbwers. Those were the days before fast food restaurants. Try a squeeze-type plastic bottle of water When traveling with small children, an empty squeeze-type plastic bottle filled with water is handy for cleaning sticky fingers.
