Try these strawberry recipes
It’s that special time of year for those of us who are strawberry lovers. Their fresh sweet flavor is best when just picked off the vine, but the following recipes might come in handy when you want to be more festive. 2-3 T. cold water V 4 cup firmly packed brown sugar 1 2 tsp. cinnamon Light cream Combine strawberries with sugar and cornstarch; set aside. To prepare crust: Combine flour and salt in bowl and cut in shortening until it resembles coarse meal. Remove % cup of this mixture and set aside. Sprinkle water over remaining flour mixture and stir lightly until moistened. Press into a ball; roll out on lightly floured surface
to fit pie plate. Fit into plate and trim to * 2 -inch beyond plate rim. Fold dough under and flute edge or press gently with tines of fork dipped in milk. Fill unbaked pie crust with strawberry mixture. Blend reserved flour mixture with brown sugar and cinnamon; sprinkle over strawberries. Bake at 400° for 45 minutes or until crust is browned. Serve warm or cool with cream. ELEGANT STRAWBERRY ROMANOFF 2 baskets whole strawberries 1 3 cup orange flavored liqueur 1 cup whipping cream Mi cup sugar Marinate strawberries in orange flavored liqueur for about 1 hour. Puree half of them. Whip whipping cream with sugar: fold in puree. Spoon over whole berries. Serves 6. NO-COOK STRAWBERRY PIE 1 cup sugar 3 T. cornstarch Red food coloring 1 tsp. lemon juice 24 cups sliced fresh strawberries 1 baked 9-inch pie shell Whipped cream Bring sugar and one cup water to boil in saucepan. Mix cornstarch with small amount of cold water and stir into sugar mixture. Cook, stirring constantly, until thick and clear. Remove from heat. Add several drops of red food coloring and lemon juice. Cool thoroughly. When cool, stir in sliced strawberries and pour into baked pie shell. Chill for one hour. Top with whipped cream either before or after chilling. TRIPLE LAYER PARFAIT 1 (3 oz.) package of strawberry gelatin 1 cup boiling water 1 cup cold water 2 pints strawberries halved 3 cups whipped topping Dissolve gelatin in boiling water; add cold water. Reserve ‘ 2 cup gelatin at room temperature. Pour remaining gelatin mixture into six parfait glasses or dessert dishes. Add half of strawberries. Chill until almost set. Fold reserved gelatin mixture into 2 cups whipped topp- ' ing. Spoon over first layer. Chill until firm. Top with remaining
berries and whipped topping before serving. Makes six servings. MAPLE MOUSSE CREPES 1 cup milk 3 4 cup Aunt Jemima Original Pancake & Waffle Mix 3 eggs 2 T. vegetable oil 3 4 cup Aunt Jemima Syrup or or Lite Syrup 1 (8 oz.) package cream cheese, softened 1 cup whipping cream, whipped or 2 cups non-dairy whipped topping Combine milk, pancake mix, eggs and oil, mixing until smooth. Let stand 5 minutes. Heat 6 or 7-inch crepe pan or skillet over medium-high heat; grease lightly. For each crepe, pour about 2 tablespoons batter (one-half to v 4 cup dry measure) into hot prepared pan; immediately tilt pan to coat bottom evenly with thin layer. Cook 45 seconds or until top looks dry. Turn; continue cooking about 20 seconds. Stack between sheets of wax paper. In small mixer bowl, gradually add syrup to cream cheese, beating at medium speed of electric mixer until smooth. Fold in whipped cream; chill one hour. Spoon abput * 4 cup syrup mixture down center of each creape; roll up. Place in 13x9-inch glass baking dish; chill until ready to serve. Serve with sliced sweetened strawberries. Yields 12 servings. NOTE: Crepes can be made ahead and a frozen up to 2 to 3 months. Stack cooled crepes on paper plate with sheet of wax paper between each crepe. Wrap securely in foil or seal in plastic* bag; freeze. Thaw overnight in refrigerator. NEW ORLEANS STRAWBERRIES 1 2 tsp. vanilla extract OR 1 2 tsp. rum extract OR > 2 tsp. ground cinnamon OR 2 tsp. ground nutmeg 1 cup (8 oz.) sour cream 1 qt. fresh strawberries, cleaned and hulled Dark brown sugar Stir desired flavoring into sour cream. To serve, place sour cream, sugar and strawberries in individual serving bowls. With fork or toothpick, dip strawberries into sour cream, then brown sugar. Makes 6-8 servings. Fishing derby Bendix Woods County Park, New Carlisle, will have a free fishing derby for children ages 10 and under, Sunday, June 17, at 2 p.m. Participants must be accompanied by an adult and provide their own poles, sinkers and bobbers. Bait will be provided. All novice anglers are to meet at the ponds across from the ski slopes.
