FLAG BURNING CEREMONY —• The Kosciusko County Council of the American Legion held a public flag burning ceremony in Milford. Sunday, June 13. at 3 p.m. with Legions from Warsaw. Pierceton. Syracuse. North Webster and Milford participating. Also participating were the Syracuse Veterans of Foreign Wars members who made up the honor guard and the VFW Auxiliary . Other auxiliary units included those from American Legion Posts in Warsaw and Pierction. American flags which were tatered and torn were burnt in front of the Milford Town Hall in the proper way to discard old flags. Participating in the cermonies were Paul Beexley. acting commander; Jerry Lowe, first vice commander; Danny Bill Jones, second vice commander; Jack Hensler. chaplain; and Dick Shock, sergeantntorms. As part of the flag burning ceremony, the Syracuse VFW Color Guard posted the colors and old Hags were presented for inspection prior to the burning ceremony. Sprouts for today | By PATRICIA M. RATHBUN Extension Agent, Home Ec. The custom of sprouting seeds is more than twice as old as the Great Wall of China. Today many people are familiar with sprouts only in Chinese cuisine, and usually only bean sprouts. Sprouting possibilities are expanding from beans to a wide variety of seeds. Alfalfa, mung, soy, wheat and lentils are a few of the seeds which are easily sprouted, economical and tasty. The individual characteristics of sprouts should be considered when used for cooking. Alfalfa sprouts contain less water than other sprouts. On the palate they tend to feel string-like and may tend to cling together. Mung sprouts are larger than alfalfa sprouts and are those most often seen commercially. Soy sprouts are the largest of the sprouts commonly used They are higher in fat content than the other two. When sprouting, selection of the seeds is the first step. If you have never grown seeds for sprouting try mung beans They have a high percentage of germination, grow rapidly and taste great Be sure to buy untreated seeds that are intended for eating Never use seeds that were meant to be planted in gardens or on farms because they are treated with fungicide. There are many ways to grow sprouts, but the easiest method is using a wide-mouthed jar. Presoak the seeds in an. clean quart jar and cover them with lukewarm water Let them soak for 12 hours or overnight. Drain the seeds through a collander Rinse throughly, pouring off any excess water. Rinse the quart jar and put the seeds back in it for sprouting Cover the mouth of the jar with a double thickness of cheescloth and secure it with a rubber band. Place the jar mouth downward at a 45 degree angle so the seeds are scattered in a single layer along the sides of the container. Place the jar in a bowl, then put the bowl and jar in a warm, dark place for the seeds to sprout. Seeds must be rinsed with water three to four times a day and excess water drained off. If seeds are not kept moist, the crop could be lost. Return to darkness after rinsing. The sprouts should be ready to eat in three to five days. Remove them before tiny rootlets appear They can be kept in a covered dish in the refrigerator for several days. Sprouts supply some nutritional benefit, but not in large amounts. Two ounces of alfalfa sprouts provide 20 calories. 400 I U's vitamin A and trace amounts of the B Complex vitamin. The average adults requirement for vitamin A is in the range of 5,000 I U’s. Also two ounces of the tiny, thread-like alfalfa sprouts could cover an average dinner plate. However, if you want something new and different to brighten up your meals, sprouts can fill the bill. Be careful not to overcook them. Part of the appeal is their crispy, crunchy texture. Overcooking : can make them soggy Plus they’re fun to grow Educational Program A program entitled "Food Preservation" will be presented today ( Wednesday) at 1 p m with a repeat session at 7 pm in the Justice Building meeting room. Warsaw The program will cover the many different aspects of food preservation — canning, freezing and drying The basic how-to’s will be explained, equipment to use for the different preservation methods, and answer many commonly asked questions This is your opportunity to obtain up-to-date, reliable information before the home preservation season Another plus of the program is the opportunity to have your dial gauge tested for accuracy. The testing will be done free for those attending the program Testing will be conducted prior to the 1 p.m. session and from 6:30-7 p m in the meeting room For the test, bring the lid of your canner only. Only - dial gauges, those registering by pounds, can be tested. The program is open to the public. .Meatless Chop Suey 4 cup oil 2 large green peppers cut in cubes or strips 1 cup boiling water 1 cup onion, cut in thin strips 2cups celery, cut in medium-sized pieces 2 tsp soy sauce 3 cups sprouts 4 cup flour 4 cup tsp pepper 14 tsp. salt Put oil in large skillet. Add green peppers, onion, celery, and sprouts Saute for two minutes, but do not brown. Add the boiling water. Cover. Cook seven minutes. Make a paste of the flour, spy sauce, and a little water if needed. Add to the vegetable mixture and cook for three minutes Serve piping hot over noodles or rice.
