Looking for a special breakfast to feed your family during the holidays? Try prunes in breakfast foods, fruit compotes, muffins, pancakes, coffee cakes or as garnishes for eggs and sausage. Prunes are an excellent source of vitamin A and iron and a good source of magnesium, riboflavin, niacin and vitamin 86, says the US Department of Agriculture. And right now there are plenty around — more than 200,000 tons, says USDA’s. Agricultural Marketing Service. Piping hot rolls are an excellent way to start the day. Why not try these easy "Prune Breakfast Swirls” or "Prune Wheat Muffins.” Prune Breakfast Swirls 1 cup (0.24 L) chopped cooked prunes 4 cup (0.06 L) sugar 4 teaspoon (2.5mL) cinnamon 1 teaspoon (5 mL) grated orange rind I>2 cup (0.60 L biscuit mix 4 cup (0.18 L) milk 2 tablespoons (30 mL) melted butter Icing * Mix sugar, prunes, cinnamon, and orange rind well. Canbine biscuit mix and milk to make soft dough. Roll to rectangle about 8 by 12 inches (20.32 cm by 30.48 cm). Spread with butter and prune mixture. Roll up from long side, to make 12-inch (20.32 cm) roll. Cut into 1-inch (2.54 cm) slices, and place each in a greased muffin pan. Bake in moderately hot oven (375 F or 191 C) about 20 minutes. Allow to stand about 5 minutes. Remove from pan and spread tops with icing. Makes 12. •Icing: Mix together :i 4 cup (0.18 L) sifted powdered sugar, 4 teaspoon (2.5 L) grated orange rind and 2 teaspoons (10 mL) orange juice. ‘ Prune Wheat Muffins 1 cup (0.24 L) prunes 1 cup (0.24 L) sifted flour 2 teaspoons (10 mL) baking powder 1 teaspoon (5 mL) salt 4 teaspoon (5 mL) soda 4 teaspoon (2.5.mL) cinnamon 4 teaspoon (1.25mL) nutmeg 4 cup (1.67 mL) brown sugar legg 1 cup (0.24 L) buttermilk a sour milk >/ 4 cup (0.06 L) melted shortening Doe killed A doe was killed when an auto driven by Barbara A. Booher, 45, Leesburg, struck the deer as it ran in front of her auto. The mishap occurred on CR 150 W, north of US 30, Saturday evening, Dec. 13. Booher told Kosciusko County Patrolman Burdell Blackburn two deer ran in front of her vehicle and she struck the second one. Damage was estimated at S7OO to the auto.

Blend milk and egg yolks; stir into sugar mixture. Cook over medium heat, stirring constantly, just until mixture boils. Reserve one cup of the mixture; set aside. Soften gelatin in cold water; stir into remaining hot mixture in saucepan. Stir in rum. Chill in refrigerator, stirring occasionally until mixture mounds slightly when dropped from spoon. Combine chocolate and the reserved mixture; pour into baked pie shell. Beat egg whites and cream of tartar until foamy. Beat in onethird cup sugar, one tablespoon at a time; continue beating until stiff and glossy. (Do not underbeat.) Fold gelatin mixture into meringue. Spread on chocolate mixture. Chill at least three hours or until set. If you wish, garnish with whipped cream and shaved chocolate. NURNBERGERS Ic. honey :i 4 c brown sugar (packed legg 11. grated lemon peel IT. lemon juice c. flour It. cinnamon 41. soda 1 21. each allspice and nutmeg 4t. cloves 4 c. cut-up citron 4 c. chopped nuts Blanched almond halves Candied cherries In saucepan, heat honey to boiling. Cool thoroughly. Stir in egg, sugar, lemon peel and juice. Mix in remaining ingredients except almonds, cherries. Cover; chill at least eight hours. Heat oven to 400 degrees. Roll small amounts of dough at a time one-quarter inch thick on lightlyfloured cloth-covered board. (Keep remaining dough chilled.) Cut dough into two-inch rounds. Round up each round a bit toward center; place almond halves around edge and candied cherry in center. Bake 10-12 minutes or until no imprint remains when touched. Brush icing lightly over cookies; immediately remove from baking sheet. Cool. Makes about five dozen cookies. KOULOURIA 4 c. butter a margarine, softened 4 c. sugar legg -> legg yolk 1» 2 1. vanilla 14 c. flour 1 21. soda 41. salt 1 egg white 4 c.sugar Beat butter, one-half cup sugar, the egg, egg yolk and vanilla until light and fluffy. Mix in flour, soda and salt (dough will be stiff.) Cover and chill for two hours. Heat oven to 350 degrees. Shape dough by heaping teaspoonsful into ropes, each six inches long and one-quarter inch thick. For smooth, even ropes, roll them back and forth on lightly-floured cloth-covered board. On greased baking sheet, shape each rope into figure-eight, letting ends extend one-half inch. Complete cookies one at a time. Beat egg white until'foamy, gradually adding one-quarter cup sugar while beating. Brush tops of cookies with sweetened egg white. Bake 15 minutes. Makes four dozen cookies. EASY ICING 3 c . powdered sugar %t.salt 141. vanilla 3 T. water Mix until smooth and of spreading consistency. Tint with few drops of food color if you wish.
