Dandelion green
The colonists didn’t know beans about vitamins and minerals. Their specialty was survival, says Arleen Arnold, Michigan State University food marketing agent. In winter, they lived off the contents of their root cellars and the fresh meat they could get by hunting. By the time the snow melted, they needed a “spring tonic,” and the colonial homemaker knew just how to provide one. She just cooked up a “mess pf dandelion greens.” Though she didn’t know it, she was giving her family one of the most vitamin and mineral-rich vegetables there is. Dandelions may be a nuisance in your lawn, but they make such a tasty vegetable that many truck farmers in New York, New Jersey, Florida and Texas grow them commercially. Dandelion greens are sold all year round in some places, but in the Detroit area are sold mostly February through April. After that, if we want dandelion greens we can just go out and cut our own. flowers, daisies, chickory, lettuce, endive and artichokes. Commercially-grown dandelion greens are somewhat lighter in color and a bit more tender than are the wild greens. They have a faintly bitter taste which is quite pleasant. Commercially-grown dandelion greens are cut just below the surface of the ground, so that the part of the root remaining with the leaves can hold them together. Leaves separated from the root wilt quickly. When buying or picking, choose plants which are young and tender — they tend to get bitter after flowering. Wash thoroughly in several waters, for sand and grit tend to cling, especially close to the root. The root should be cut off and the plant quartered through the base. If the greens

are to be used in green salad, they should be drained and crispened in the refrigerator. A tart French or vinaigrette dressing would be perfect. To cook the greens, put the washed plants into a large saucepan. Remember, they code down a lot, so add just enough water to keep them from scorching. Cook until the leaves are all wilted. Drain off the water (which is apt to be rather strong). The greens are then ready to serve with salt and pepper. Crumbled, crisp bacon and lemon juice make a good combination with cooked dandelion greens. In parts of the South, dandelion greens are cooked with salt pork and served with pepper and vinegar. You’ll find more vitamin A and iron in dandelion greens than in any other fruit or vegetable, including spinach. There’s also calcium, phosphorus, thiamin, riboflavin, niacin and vitamin C,
