Each year the funds raised by the Evening Bridge-O-Rama are donated to the Youth Center for a specific use Do adults need calcium? By PATRICIA M. BRAMAN It is a common error to assume that adults don't need calcium because their bones are no longer growing in length. Bones are not static They are constantly in the process of breakdown and rebuilding. Calcium can enter the body only through the food eaten in the diet. If adequate amounts of calcium are not provided in the diet, calcium is mobilized from the skelton and demineralization or bone breakdown occurs. Just how much calcium is needed to prevent bone demineralization'’ The RDA for has been set at 800 mg per day by the National Research Council of the National Academy of Sciences. What foods will provide you with 800 mg of calcium per day? Among common foods, milk (290 mg of calcium per 8 oz cup) and cheese <2lO mg per ounce* are considered to be the richest sources of available calcium cottage cheese is not quite as good a source, having about 100 mg of calcium per 4 cup. Values for the mineral elements such as calcium given in food composition books are based on chemical and physical methods of analysis. These values are based on the amounts present in foods and not the amounts available to be absorbed by the body. For example, leafy green collards contain 360 mg of calcium per cup of cooked drained leaves. But substances such as oxalic acid combine with calcium to form insoluble salts that make calcium unavailable for absorption So the calcium from vegetable sources is not as readily available as that from milk products. Adults do need calcium to maintain bone strength. Two or three glasses of milk each day will easily fulfill the RDA for calcium in adults. Cheese-Ham-Noodle Casserole Make a white sauce using 3 T. fat. 3 T. flour. 2 cup milk. 4 tsp salt. Cook until thickened Add 1 cup diced processed cheese. Melt, then add I cup cooked ham and 1 lb of cooked noodles Mix Simmer until flavors are well blended
