Fish is very perishable
By PATRICIA M. BRAMAN Extension Agent, Home Ec. A popular winter sport for men, ice fishing, may not be so popular with the women who must prepare the fish for storage. But preparing fish for future use i# simple if you follow basic rules. The first rule to remember Gamma Sigmas were busy in November and December November and December were busy months far the Gamma Sigma • chapter of ESA in Syracuse. A home decorating party was held in the home of Ann Hapner to benefit the Gillespie family in North Webster on November 16. The representative for the decorating company shared ideas and show items with the group Another benefit “party" was held in early December by Diane Cripe. A plastics ware showing was attended by club members and a percentage of the proceeds was turned over to ESA for their holiday philanthropic efforts. The December meeting of the group was held as a dinner at the Beacon on December 15. The occasion was highlighted by a silent (and not so silent) auction of handmade Christmas articles brought by every club member. The revealing of the year’s secret sisters and a gift exchange also added to the fun. A jewel pin ceremony followed dinner, in which four pledges, Mrs. Bob Ahms, Mrs. Steve Elliott, Mrs. Wade Logan and Mrs. Tom Thornburg, were formally initiated into JSSA. New pledges, April Newcomer and Jane Wiezcork, were also welcomed to the group. The next meeting of the Gamma Sigma chapter of ESA will be January 19. concerning fish is that it is a very perishable product. All fish, due to their tender, delicate structure are easily damaged if roughly handled. Care taken early in the catch will aid in a better conditioned fish whether used fresh or conserved for future use. Fish freeze well if they are cleaned quickly, kept cold, and frozen quickly. If it is impossible to clean and freeze at once, keep under refrigeration, but no longer than 24 hours. Never allow fish to become warm as spoilage progresses rapidly. Fish should be bled as soon as - possible after catching. All the blood may be drawn out of the fish by soaking in a brine solution made with two tsp. salt to one quart wate from 10 minutes to one hour. A stronger brine will make fish firmer and harder. Lean fish should be rinsed in salt water (about one cup salt to one gallon water) to preserve color and texture and prevent drip or leakage. Fatty fish may be dipped from 10-20 seconds in a solution made by mixing one tsp. pure ascorbic acid to one gallon water. This solution prevents the development of rancidity. Freezing fish can be done by two methods. One is to freeze in

an ice block. Place several small cleaned fish in a loaf pan, wax carton, or coffee can, then cover with water and freeze. When the blocks are solid, remove from pan and wrap in freezer packaging material and store. The second method, glazing, is a method recommended to prevent fish from drying out in the freezing process. Loosely wrap or freeze unwrapped the amount of fish to be wrapped in one package. As soon as frozen dip the fish quickly in ice cold water and return to the freezer. Repeat the dipping process until a glaze ‘inch thick has formed. Wrap in freezer paper and store at 0 degrees F. Ravioli Wins Hands Down
There’s a great resurgence of at-home games, I ..more people play chess, checkers, cards, dominos, scrabble, even Uncle Wiggley, than five years ago. Here’s a chance to have an inexpensive fun evening at home. For gametime refreshments, why not serve that all-time eating favorite, ravioli? We’ve had some fun concocting two different recipes from a 40 ounce economy size can of Mini Ravioli; half the can was used in a casserole, the other half was fried for crunchy, munchy finger food. Both will delight your guests after a fast poker game. CHECKERBOARD RAVIOLI CASSEROLE 1/2 pound ground beef 1/2 cup chopped onion 2 tablespoons biAter or margarine 1/4 teaspoon garlic powder 1/2 can (40 oz.) Mini Ravioli 1 package (10 oz.) frozen chopped spinach 1 cup shredded Cheddar cheese 1/2 cup bread crumbs 1 egg, beaten 1/4 teaspoon salt Brown ground beef in butter; add garlic’powder. Com- * bine ravioli and beef mixture. Arrange one-half of mixture in bottom of 8” by 8" by 2-1/2" square baking dish or a 2-quart round casserole. Cook frozen spinach~according to package directions; drain well. Combine spinach, cheese, bread crumbs, egg and salt. Spread spinach mixture on top of ravioli mixture. Arrange remaining ravioli mixture on top placing ravioli like squares on checkerboard. Bake at 350°F. for 30 to 35 minutes. Serves 4. MINI FRIES 1/2 can (40 oz.) Mini Ravioli 1/4 teaspoon garlic salt 3/4 cup bread crumbs 1 cup oil 1/2 teaspoon Tabasco sauce 1 tablespoon water Remove ravioli from can; save remaining sauce. Combine garlic salt and bread crumbs. Bread ravioli and cover with wax paper, press gently and allow to stand in refrigerator for 1/2 hour. Fry in oil until golden. Remove to warm platter. Remove one-half cup of remaining sauce; combine with Tabasco sauce and water for dip. Serve with fried ravioli. Serves 4 to 6.
