Q. I would like tips on cooking lentils and suggestions on how they can be served. A. Lentils, being rather on the dull side, can be sparked up if combined with the right ingredients. Mix them with fruits, vegetablesor meats. Their mild but distinctive flavor can be brought out by straight-forward butter and subtle saucing or may be enhanced by the addition of sour c. earn, mushrooms, cheeses, brown sugar, molasses, onions, herbs, nuts or smoked meats Lentils are inexpensive and nutritious They provide a big share of a persons dailyprotein. mineral and vitamin need. Unlike dried peas and beans, lentils don't require soaking and cook quickly — in just 30 minutes. Wash lentils prior to cooking, add water, seasoning, if desired, bring to boiling point, reduce heat to simmer. Cover tightly Cook for 30 minutes Remember that 1 cup of lentils will expand to 2 to 24 cups after cooking. Because of their low moisture content, dry lentils should be stored in jars or cans with snug fitting cover and in a cool dry place. Q. Can fresh and frozen fruits be combined for a successful fruit bowl and which fruits combine the best? • A: Fresh and frozen fruits can be successfully combined and most types of fruits combine well together By combining canned.
frozen and fresh fruits, the end product is what the French call a “compote composee" Try these combinations: 1) slice pinapple. apricot halves, sweet red cheeries: 2) watermelon balls, peach slices, organge slices; 3) grapefruit sections, unpared apple slices, or 4) cooked dried fruit, white cherries, red raspberries. One word of caution. Use an anti-browning solution or combine pared fruit with citrus fruit to prevent browning. Q. Does a particular potato salad recipe make a difference in the food spoilage potential? A. The acidity level in salad mixtures will aid in the prevention of spoilage bacteria. When enough pickles and acid salad dressing are distributed in the mixture, the acid they furnish is an aid against spoilage. Purdue university suggests that you — use as much pickles as you would like, because it helps to retard food spoilage — marinate the cooked potatoes immediately after dicing; acid containing dressing discourages the grow th of bacteria — decrease the quantity of ingredients which favor bacteria growth such eggs, keep separate and add just before serving and remember, maintain cold food at 42 degrees F and never allow food to remain at temperatures favorable to bacterial growth for long periods of time.
