By PATRICIA M. BRAMAN Extension Agent Home Economist Q. What is the difference between vegetable shortening and lard and are there advantages for using one over the other? A. Lard is animal fat rendered from the fat of hogs while vegetable shortening is hudrogenated fat containing animal fat plus vegetable oil — such as soybean, cottonseed, peanut or com. Each has their own advantages and disadvantages and the use of one over the other is based on the consumer’s preference. Lard has been labeled by chefs for its superior shortening qualities to create flaky biscuits and pie crusts though it does not lend itself well to cake baking It is recommended that lard be stored covered in a cool, dark place, preferably the refrigerator, to keep it from becoming rancied. Vegetable shortening can be stored covered at 70 degree F for a long period of time. It has superior baking qualities than lard in creating high volume cakes, springy and soft texture. Lard is generally lower in cost than vegetable shortening, but the final choice, based on individual preference is left up to the consumer. Q. Can mushrooms be frozen? A. Yes.
