Milk for family meals WEST LAFAYETTE — Everyone is trying to cut food costs Yet some may have overlooked spending for dairy products because they know milk must be provided for the family needs Take a second look at the pattern of buying and using milk, advises Marcile Allen. Ellen, extension foods and nutrition specialist at Purdue university Milk delivered to the home frequently costs more than in a food or dairy retail store. Multi-quart containers often cost less than quart containers. If there is a difference in price, buy the form or forms of milk that best meets the family needs at the best price. This may mean buying nonfat dry milk in as large a package as can be stored and used without waste, o& buying store specials in fluid fresh milk perhaps in multi-quart containers. ■Hie homemaker may want to have several forms of milk avaikole for hone use. suggests the Purdue specialist. Often, onlyhabit limits the choices. Fluid fresh, nonfat dry and evaporated milk are probably the three most popular forms available. Fresh fluid milk is the choice for many w hen milk is to be used as a beverage, but nonfat drymilk keeps well and. when purchased in the right size for the family, can be used without waste. Evaporated milk takes less storage space than fluid milk and does not require refrigeration until opened. In using nonfat dry milk powder. Allen suggests the adding of dry milk powder to the day ingredients in a recipe and then add water for the required amount of liquid. In recipes calling for a cup of buttermilk or sour milk for baking, you can substitute one cup of fresh milk plus one tablespoon vinegar or lemon juice, (let stand for five minutes before using). A food safety tip: Don't mix new milk with oldunless you are going to use it immediately Just to be safe, don't put milk which has been taken from the storage container back into the storage container if it has been at room temperature for any extended period The number of bacteria increases as milk ages or stands at room temperature MUSIC SALES UP Musical instrument sales have climbed about 15 per cent over the past three years and the record-breaking volume should continue in 1976, according to the National Association of Band Instrument Manufacturers.
