Home canning on the increase

By MRS. ANN HANCOOK Extension Agent. Home Ec At a recent meeting of extension home economists of northern Indiana, the guest speaker was Mary Lou Williamson home economist for a leading canning company. She shared information with the group concerning the supply of canning lids this season, proper canning procedure, and selecting a good canning reference book There should be an adequate supply of canning lids this year. Manufacturers have been working day and night producing over 1.6 billion lids. The lids are sold to distributors and it is up to them to sell them to retailers. The lids are now in the hands of the distributors and should be on the market soon. Mrs. Williamson warned that if consumers hoard lids it can cause a false shortage Buy only what you need for this season! read the instructions carefully. The two leading manufacturers of lids have different procedures for sealing. Read their directions carefully for a good seal. Since canning is increasingly popular, more and more companies are entering the canning business. All manufacturers of canning equipment must meet certain government specifications for safety. Be aware of “new” easy methods of canning. There are no easy quick methods. Follow reliable procedures. Remember that the top of a two piece lid can be used only once. The screw bands may be used numerous times if they are in good condition. In our humid climate rusting is a problem. To prevent rusting, wash the bands, bake them at 300 degrees for 15 minutes and store in a plastic bag For specific canning procedures pick up a copy of the USDA bulletin home canning of fruits and vegetables at the county extension office.

The Elkhart county extension office, east of Goshen, has obtained equipment for checking pressure canner gauges, according to Lois M. Gotwals. extension home economist. Homemakers desiring to check pressure gauges should call the Elkhart county extension office for an appointment. Each person must bring his complete canner inducting lid. rack, gauge, pet cock and instruction book to the extension office at the appointed time. They will then receive instructions and will check their own canner in the office kitchen. The checking process will take approximately one hour since each canner must be operated through a total canning cycle. There is no charge for this consumer service.
