Holiday eating: Dieter’s downfall?
Your scales may be cringing as the holidays approach And when the holidays are over, your seams may be begging for mercy — unless of course, you take some precautions to avoid the disastrous weight gains so common during the Christmas season. “The period from Thanksgiving to New Year's spells disaster for most weight watchers,” says Janet Greger, extension foods and nutrition specialist at Purdue university. “Even those who don't normally have a weight problem tend to gain a pound or two during the holidays.” The reason for most of the weight gain? “Most individuals consume more calories at holiday meals and parties than they can use up through exercise,” Dr. Greger explains. Unfortunately, eating —’ in fact, overeating — is part of the Christmas tradition for most Americans. Not only do Americans consume large amounts of food, but they eat foods that are very rich and have high caloric content, she adds. Dr. Greger notes that you can control caloric intake during the holidays and still enjoy the festivities. She offers several tips that will help you keep your weight at its current level while you celebrate with your friends and family: Try not to gorge. Enjoy small servings but pass up that second helping. limit the amount of food you eat at parties. Sit as far away from the food as possible, and when a tray is passed to you, pass it on quickly. Be aware that many holiday foods supply lots of calories but few nutrients. For example, a one ounce candy cane has 110 dtfories; a one ounce chocolate peppermint, 133 calories; a three and one-half ounce martini, 140 calories; and a four ounce eggnog, 335 calories. When planning menus, remember that sauces and toppings also add calories. If you eat more than usual, try to bum up some of the extra calories through exercise. You might try parking a long way from the store when you do your Christmas shopping. And take the stairs rather than fight the crowds on the elevators and escalators. There are ways to adapt some foods to give it a special holiday flavor without adding many extra calories, the foods and nutrition specialist continues. PUMPKIN CHIFFON 1 envelope unflavored gelatin ¥4 cup cold water 3 eggs, separated 1 cup sugar IV4 cups pumpkin, cooked or canned ¥ 2 cup skim milk OR reconstituted dry milk t ¥2 tsp. salt ¥4 tsp. cinnamon ¥4 tsp. nutmeg ¥2 tsp. ginger ¥ 2 cup whipped cream topping, made from mix Soften gelatin in cold water. Combine egg yolks and one-half cup sugar in saucepan; beat until think. Add pumpkin, milk, spices, and salt. Cook pumpkin mixture over medium heat, stirring constantly until slightly thick. Remove from heat and add softened gelatin. Stir until dissolved. Chill until mixture begins to thicken. Beat egg white in mixing bowl until foamy. Gradually add one-half cup sugar; beat until stiff peaks form. Fold one-half cup whipped topping made according to package directions and egg whites into the gelatin mixture. Spoon into dessert dishes and chill at least four hours. Serves 8. Companion animals make fine gifts
Pets or companion animals — as they are now called — make fine Christmas presents. However, their freedom from disease and general good health are essential to their becoming a lasting and enjoyable gift, says Dr. K. M. Weinland, Purdue university extension veterinarian. A small animal, such as a puppy or kitten, needs vaccinations early in life to protect it from infectious diseases. These diseases can be fatal or very destructive. A new puppy or kitten may also need some assistance in adjusting to its new home. “The animal’s initial health and disease preventive measures are very necessary if the pet ’s coexistence with the family is to be successful,” stresses Dr.
