Peppermint Ginger Bars
* Isl . "a ** Sugar and spice — and everything nice .— make a welcome holiday appearance in a tasty bar cookie. Peppermint Ginger Bars incorporate two seasonal favorites — gingerbread and gaily striped candy canes. Rich in fragrant spices and sweet molasses, each chewy cookie is laced with crushed peppermint candy. To emphasize the flavor, mint is blended into and sprinkled on top of the smooth cream cheese icing. Send Peppermint Ginger Bars off to school with the children, to work with the grown ups or to wish the best of the season to friends and neighbors. They're moist, long lasting and nutri tious because they're made with enriched flour. “Enriched” on the label promises essential B vitamins, thiamihe, niacin and riboflavin, plus the mineral, iron — nutrients needed daily for good health. PEPPERMINT GINGER BARS 24 bar cookies
1/2 cup shortening 1/2 cup sugar 1 egg, beaten 1/2 cup light molasses 11/2 cups enriched flour* 1/2 teaspoon salt 1/2 teaspoon baking soda
Cream together shortening and sugar until light and fluffy. Blend in egg and molasses. Combine flour, salt, soda and spices; blend into creamed mixture. Stir in 4 cup candy. Spread batter evenly in greased 9 x 13 inch baking pan. Bake in preheated 350° oven 25 to 30 minutes, or until done. Cool. Frost with Peppermint Icing. Sprinkle remaining candy on top. Cut into bars. Peppermint Icing: .. - 3 1/2 cups confectioners' sugar 1/2 teaspoon peppermint 1 package (3 ox.) cream extract cheese, softened Red food coloring 2 tablespoons water Cream together 2 cups confectioners' sugar and cream cheese until light and fluffy. Add water, peppermint extract and a few drops food coloring. Blend in remaining sugar. •Spoon flour into dry measuring cup; level. Do not scoop. NOTE: If self rising flour is used, omit salt.

Gift lists can and should be made early. Most families have established traditions as to whom gifts are given each year and names are added as desired. Setting a price ceiling on gifts to be exchanged among friends and relatives can assist one in planning. This may possibly result in lower gift expenditures. When gift lists and suggestions for individual gifts receive advance thought, many items can be purchased at reduced rates during seasonal or pre-season sales. It’s also wise to shop early if you want a specific item. Gifts to be mailed should be purchased at least six to eight weeks before Christmas so that last minute postal delays can be avoided. Most gifts given in this country are to express thoughtfulness and love rather than to fill economic needs of the receiver. Ways of increasing satisfaction and reducing gift expenses are limited only by the imagination of the giver. Unique and often inexpensive gifts are especially well received, notes the specialist. Try making some of the gifts yourself. Candy, cake, cookies, sweaters, scarfs, and wooden objects are only a few of the possibilities. Items with a personalized touch are often more appreciated since they seem to convey a special warmth. If buying toys for Christmas, keep variety in mind, says Purdue university’s extension human development specialist. A child needs an adequate assortment to develop wide interests and different skills. Every child’s play equipment should include toys for physical exercise, toys for make-believe, materials for building, and materials lor developing manual and creative skills. Let each family member assist the planning and development of family holiday traditions, suggests the Extension human development specialist at Purdue university. This allows adults and children alike to feel they have made a contribution,, Gifts Con Say Thanks At Christmas It is customary to gift people who have been of service throughout the year — the mailman, garbageman, milkman, newspaperboy, building superintendent, cleaning lady and delivery boy. / Cigarettes, cigars, tobaccos for the smokers could eliminate the “what to get" for some of these persons. Cordials, liqueurs, cakes and candies are also season’s specialties for thoughtful gifting. Gloves and mufflers are appreciated gifts by the odt-of-doors working man. And, thermos jugs and insulated food keepers can make the routes early in the morning a little more comfortable. Housekeepers appreciate gifts of toiletries, clothing and accessories like gloves and scarves. Gift certificates are always perfect for the “not sure - what to get anybody.’’ It does away with the burden of more holiday shopping.

Pleasant holiday smells are many, but it is hard to compete with the delicious aromas of roasting turkey and bubbling cranberries.
