Cakes FRUIT COCKTAIL CAKE 1 cup flour 1 cup sugar 1 tsp baking soda 1 cup fruit cocktail, juice too 4 tsp salt 1 egg Mix all except egg with mixer Be careful not to over mix. Add egg and beat. Pour into well greased pan (do not use too shallow a pan) and add topping Bake 34 minutes 350 degrees. 10 or 6 meh pan suggested. Topping 4 cup chopped nuts 4 cup brown sugar 1 T flour Mix and spread over cake mix before baking. Serve warm or cold with whipped cream. BANANA CHIFFON CAKE 24 cups sifted cake flour 14 cup sugar 3 tsp. baking powder 1 tsp. salt 4 cup vetetable oil 6 egg yolks, unbeaten 1 cup mashed ripe bananas 1 T lemon juice 6 egg whites 4 tsp cream of tartar Sift dry ingredients. Combine oil egg yolks, bananas and lemon juice and add to dry ingredients. Beat until smooth and set aside. Combine egg whites and cream of tartar. Beat until stiff peaks form when beaters are pulled up. Gently fold into batter until completly blended. Pour into ungreased 10 inch tube pan. Bake 350 degrees for 50-60 minutes or until cake springs back when lightly touched with fingers Remove from oven and invert on funnel. Allow to hang until completely cooled. Remove from pan and frost with butter icing. Butter icing 1 cup butter 1 cup sifted confectioners sugar 1 tsp. vanilla 24 cups sifted confestioners sugar one-third cup evaporated milk Work butter with spoon until soft and add cup of sugar and vanilla, beat continually.
