If there are weight watchers in your family, help them keep trim but well-fed by using low calorie fruits. Try this luscious dessert for dinner tonight: Moek Souffle Apricot Sauce 1 tablespoon plain gelatin 1 can (16 oz.) Diet Delight % cup cold water apricots 1 cup boiling water 1 stick cinnamon cup lemon juice several cloves % cup sugar 1 twist lemon peel. 3 egg whites 2 teaspoons wine vinegar Souffle: Soak 1 tablespoon plain gelatin in % cup cold water. Dissolve this in 1 cup boiling water, add % cup lemon juice and % cup sugar, stirring until sugar dissolves. Chill to thickness of unbeaten egg whites. Beat 3 egg whites stiff and whip jelly into them. Beat until mixture stiffens. Pour into bowl and chill firm. Drain juice from can low calorie apricots. Simmer juice with stick cinnamon, cloves and twist of lemon peel about five minutes. Add two teaspoons wine vinegar and drained apricots. Chill several hours and serve over mock souffle.
