In medium-size mixing bowl, let cheese soften at room temperature. Whip until light and fluffy. Gradually add sweetened condensed milk, continuing to beat until well blended. Add lemon juice and vanilla extract. Blend well. Pour into baked pastry shell. Chill in refrigerator for 2 to 3 hours. Arrange peach slices to cover top of pie. Pour Peach Glaze over peaches. Peach Glaze (Makes about ^ cup)> In small saucepan, combine 14 cup sugar and 1 tablespoon cornstarch. Blend in 34 cup mashed peaches (one large peach) and Va cup water. Cook over medium heat, stirring constantly until mixture begins to thicken and boil. Continue to boil for 2 to 3 minutes, or until mixture is clear. Strain glaze; add a few drops yellow food coloring if desired. Cool before pouring over pie.
