Are you always on the lookout for a new and unusual cake that travels or stavs at home with equal ease? If so. then this Double Lemon Cake is just for you. Dad will enjoy its lemon-y tang, the kids will think it’s terrific and you’ll like it because it’s such a simple cake to make and serve. A wonderfully moist, lemon-flavored mix gives you a head start in making this bestever cake. Bake it just one layer large in a 13 x 9-inch pan. The lemon “twin” of the cake is canned lemon pie filling that is velvetv-smooth with a just right, refreshing flavor. The pie filling goes on first, followed by a swirl of fluffy white frosting you guessed it — also from a mix. This single layer cake can be carried to church supper, picnic site or family table safely and easilv. The cake looks and tastes like one of grandmother’s old-fashioned favorites, but takes just half the time to hake, thanks to modern convenience foods. Double Lemon Lake 1 package lemon creme moist cake mix 1 No. 2 can (2 cupsl lemon pie filling 1 package fluffy white frosting mix Bake: 350° oven Yield: 13x9-inch cake Prepare cake mix as directed on package and hake in generously greased and lightly-floured 13x9—2-inch pan at 350 for 30 to 35 minutes. Cool. Spread pie filling over top of cooled cake. Prepare frosting mix as directed on package. Gently spread over lemon filling; swirl into soft peaks. Return to 450° oven for about 5 minutes, watching carefully, until frosting is lightly browned. Cake is best if chilled before serving.
