Heated clings retain their pleasingly plump shape and sunny color, and they actually acquire extra fragrance and flavor. Incidentally, the 1964 pack of California clings now in stores was a record-breaker in quantity and a pace-setter in quality. You might round out the Easter breakfast menu with multicolored soft-cooked eggs, buttered toast, hot cross buns, cold milk and steaming coffee or tea. It’s an easy-to-fix breakfast for a busy holiday morning and a mighty appetizing one! Ham with Hot Ginger Peaches Cook-before-eating ham Honey slice. 1 inch thick Butter or margarine 6 canned cling peach Ground gingtr halves, drained Slash edges of fat on ham to prevent curling. Place on broiler rack so surface of ham is about 3 inches from heat; broil 10 minutes. Turn ham; place peach halves around it cup-sides up. |Fill peaches with honey; dot with butter. Sprinkle lightly with ^ginger. Broil ham and peaches 10 minutes. Makes 4 to 6 servings. 1 "

Q. What is the name of this cut of meat? A. Beef rolled rump. Q. Where does it come from? How is it identified? A. It comes from the rump seotion of beef, right next to the sirloin section. The bones have been removed and the meat has been rolled and tied with string. Q. How is it prepared? A. If beef rump roast is of high quality, it can be roasted. That means placing it on a rack in an open pan, fat side up. Neither add water, nor cover it. Roast in a slow oven (300° F. to 325° F.) until the roast meat thermometer registers 150° F. to 170° F., depending upon the degree of doneness desired. Beef rolled rump weighs between four and six pounds, and 25 to 30 minutes per pound should be allowed for roasting time. If there’s any question about tenderness, beef rolled rump may be braised. Brown the meat in its own fat or lard or drippings. Pour off drippings, season and add a small amount of liquid. Cover tightly and cook slowly 3 to 4 hours or until tender.
