The cooked rice, flavored with vanilla and nutmeg, is unmolded on a platter, surrounded with peeled and cooked whole oranges, and topped with a hot, tart-sweet sauce of orange juice and rind. Florida’s prize orange, the Valencia, is perfect for this dessert. It’s thin-skinned and practically seedless, has richly flavored juice, and retains its shape and golden color during cooking. Orange Rice Crown IV2 cups raw rice 8 Florida oranges _ 34 teaspoon vanilla fa cup Florida orange juice 14 teaspoon nutmeg ^3 cup water IVi cups sugar, divided Cook rice according to package directions. Stir in vanilla, nutmeg and 2 tablespoons of the sugar. Press into an oiled 4 or 5-cup mold; cool. To peel oranges cut slice from top. Then cut round and round spiral fashion. Go over oranges again, removing any remaining white membrane. Cut the rind of one orange into very fine slivers. Place orange rind and remaining sugar in large saucepan. Stir in orange juice and water. Place over medium heat. Bring to boil; boil 10 minutes. Gently add peeled whole oranges. Bring to boil; simmer 10 minutes, turning frequently. Unmold rice on serving dish, surround with warm oranges. Spoon sauce on rice mold and oranges. YIELD: 8 servings.

Press mixture evenly and firmly over bottom and sides of 9-inch pie plate. Press whole wafers on edge around sides for scalloped border. Refrigerate for about an hour. Sprinkle gelatine on cold water in small saucepan: stir over very low heat until dissolved; set aside to cool. Lightly beat egg yolks and place in top of double boiler with sugar, lemon juice and salt. Stir over hot, not boiling water, until sugar is dissolved and mixture thickens slightly. Remova from hot water, stir in the thawed berries and coloring if desired. Blend in melted and cooled gelatine; chill, stirring occasionally. until mixture is the consistency of unbeaten egg whites. Meanwhile, beat egg whites until stiff hut not dry; gently fold into chilled gelatine mixture and pour into chilled crumb shelL Refrigerate at least 2 hours before serving. Yield; 6 servings.
