Q. What is the name of this cut of meat? A. Lamb arm or round bone chop. Q. Where does it come from? How is it identified? A It comes from the shoulder and can be identified by the small arm bone and cross section of three or more rib bones. Q. How are they prepared? A. They may be broiled, panbroiled or braised. For broiling, set the oven regulator for broiling. Place the chops on a rack, in the broiler pan. Insert both pan and rack so the top of 1-inch chops is 2 inches from the heat and 2inch chops 3 inches from heat When one side is browned, season, turn and broil the second side. Season. The approximate total cooking time is 12 minutes for 1-inch chops, 18 minutes for l 1 /-:-inch chops and 22 minti tes for 2-inch chops. For panbroiling, brown the chops slowly in a heavy fry-ing-pan pouring off fat as it accumulates. Turn occasionally until chops are done. For braising, brown the chops in a heavy utensil, pour off drippings. Season. Add a small amount of liquid, cover tightly, and cook slowly, 4S to 60 minutes.
