Choose a menu that answers all needs . . . one that has a hearty main dish and that can be served, if you like, right in the same container in which it’s cooked. Veal Marengo is ideal. Tender veal cubes, browned with garlic and seasonings, are cooked in flavorful canned condensed tomato soup with frozen peas, small white onions, and sliced mushrooms. All are simmered together for a lusciously good and colorful mixture to be served over fine egg noodles. Especially appealing to go alone with this savory entree is a big bowl of tossed crisp greens dressed with oil and vinegar. Assorted cheeses and seasonal fresh fruit along with hot coffee round out the menu. This is for 12, and will go to a holiday table, too.

3 pounds veal cubes (about 1-inch) % teaspoon salt Generous dash pepper 1 tablespoon lemon juice % cup olive oil 2 medium doves garlic,

2 cans (10% ounces each) condensed tomato soup 24 small white onions (about 1% pounds) 2 packages (10 ounces each) frozen peas % pound sliced mushrooms 6 cups cooked fine egg

noodles

Season veal with salt and pepper and sprinkle with lemon juice. In large skillet, brown veal in oil with garlic and Italian seasoning. Stir in soups. Cover; cook over low heat 30 minutes, stirring now and then. Add onions; cook 40 minutes longer or until veal and onions are tender. Add peas and mushrooms. Simmer 10 minutes or until 4°ne, stirring i now and then. Serve over noodles. Makes 12 servings.

Union and management negotiators agreed Saturday on the key issue of job security in their month-long contract dispute. There were no delays expected at today’s meeting. The carriers have agreed to cut back personnel through attrition — retirement, death or resignation — among all employes with less service could be fired.
