SHOALS UPI — Paul Bil-j lings, a Democrat who won a | Martin County commissioners’ seat in the Nov. 3 election but lost it in a recount, filed suit Monday to regain the office. Billings named as defendant Leland L. Shaw, a Republican, whom the recount declared winner over Billings by 57 votes. Men love beef ... in any form! Steak Roll-Ups will satisfy that man’s taste and stretch the meat budget nicely. The sauce is extra delicious and economical, too. It’s canned beef gravy ... a great stand-by for flavor-perfect meals. Thinly sliced round steak is rolled around stuffing mix, gently seasoned with herbs and moistened just right for a filling. Brown and cook top-of-stove for about an hour in the rich beef gravy, basting occasionally to blend the flavors. Stir in sour cream at the last minute, heat. Serve the menfolks a big platter of these roll-ups, sauced generously. Buttered green beans are a nice accompaniment. A selection of fruits and cheeses makes a good dessert, with, of course, plently of hot coffee or tea. Steak ReU-ups 1% pounds round steak, 2 tablespoons shortening thinly sliced 1 can (1094 ounces) beef % teaspoon salt gravy Dash black pepper % cup sour cream 2 cups packaged stuffing mix Pound steak with meat hammer or edge of heavy saucer. Sprinkle with salt and pepper. Cut into 4 pieces long enough to roll. Place about cup stuffing ^prepared as directed on package) near center of each piece of steak; roll, pinwheel fashion; fasten with toothpicks or skewers. In skillet, brown roll-ups in shortening. Add gravy. Cover; cook over low beat about 1 hour, or until meat is tender. Spoon gravy over meat now and then during cooking. Uncover; cook until desired consistency. Gradually stir in sour cream; heat slowly. Remove toothpicks. Makes 4 gene: ous servings.
