Sounds contradictory, but it’s good advice, and quite possible if you take advantage of the convenience foods, such as cake mixes. Folks will be sure you spent hours making this excellent Chocolate Chip Pecan Cake — and you get an extra bonus of a dozen and a half cupcakes! FRUIT FILLED CHOCOLATE CHIP PECAN CAKE 2 packages chocolate chip cake mix 1-1/2 cups very finely chopped pecans Prune-Pecan Filling Whipped cream, sweetened Prepare 2 packages of cake mix according to package directions. Mix in pecans. Pour batter into three round 8-inch layer pans, which have been greased and floured on bottoms and sides; use remaining batter to fill 15 to 18 greased and floured cupcake pans about half full. Bake at 375° for 25 to 30 minutes for the layer; 20 minutes for the cupcakes. Cool. Spread Prune-Pecan Filling between layers, frost with sweetened whipped cream. Decorate as desired. PRUNE-PECAN FILLING 1-1/2 cups chopped plumped Dash of salt pitted prunes 1/2 tsp. ground cinnamon 1/4 cup dark brown sugar 1/4 tsp. ground nutmeg 1/2 cup chopped pecans 2 tsps. grated lemon rind 1 tsp. lemon juice Combine all ingredients, blending well.
