Beef Up fhe Menu

Recipes Feature Chopped Meat

By Joan O'Sullivan IF YOU’RE looking to beef up the menu, and chopped beef is always a good buy, add today’s recipes to your repertoire. They feature chopped beef served in three appetizing ways. Brings Out Flavor Two of the recipes mix the meat with monosodium glutamate, a product designed to bring out the full “beefy - ’ flavor of the meat. The third recipe, Quick Company Casserole, sparks the meat with the zesty spice of Tabasco, the liquid red pepper. LION-SIZE MEAT LOAF 6 lbs. ground beef 1 tbsp. monosodium glutamate 2 tbsp. salt 1 tsp. pepper 2 tall cans (1*3 c. each! evaporated milk J 2 c. catsup 6 c. soft bread crumbs ’ 2 tsp. each thyme, savory, marioram 1 large onion, finely chopped onion rings Sprinkle beef with monosodium glutamate, salt and pep-

per.

Pour evaporated milk and catsup over bread crumbs in mixing bowl, add herbs, beat until blended: mix in onion. Add ground beef mixture; mix until lightly blended. Turn into 16x4 1 4x4-in. loaf pan or into two 9x5x3-in. loaf pans. Bake in mod. oven, 350 F., for 1 hour and 45 minutes. To serve, garnish with onion rings. Serves 24.
