If you’re on a diet this spring, are the foods you’re relying on to take off poundage giving you plenty of good nutrition? One of the tastiest solutions to the question of what to have for a light luncheon or dinner is a luscious citrus salad. Plump, juicy grapefruit and the sweet, seedless Valencia oranges from Florida make a refreshing and healthful salad that’s low in calories. Citrus, the best natural source of vitamin C, builds resistance to spring sniffles while it helps pare off pounds. Serve big salad platters like this often, adding cottage cheese and a low-calorie citrus dressing to your taste. Teamed with spring vegetables— tender scallions, baby carrot strips, watercress, endive and other greens—there’s nothing more delightful. Citrus Fruit Platter 6 Florida Valencia oranges 4 Florida grapefruit Chill fruit before preparing.
