Spring spirits will take wing when dinner has the charm of Polynesian fare. And, with adequate supplies of canned convenience foods, this flavorsome food can be prepared in a jiffy. Canned gravies qualify as among the most popular staples. Canned chicken gravy sauces this Chicken Tahiti dish, for example. Chickeny good and creamy smooth right from the can, a dash of allspice gives it South Sea Island goodness. Canned peach halves and maraschino cherries add color and a complementary flavor to the golden brown chicken parts and gravy. Complete the menu and carry out the gentle informality of the mood with a bowl of rice, tossed lightly with toasted coconut flakes. Green peas with sliced
water chestnuts and a tall pitcher of chilled fruit punch go along nicely. You’ll find this meal true company fare, too. CHICKEN TAHITI 2 pounds chicken parts 2 tablespoons flour % teaspoon salt % teaspoon pepper 1 small onion, sliced 2 tablespoons butter or margarine 1 can (10% ounces) chicken gravy 34 teaspoon allspice 0 canned peach halves % cup maraschino cherries Dust chicken with flour, salt, and pepper. In skillet, brown chicken and cook onion in butter. Stir in gravy and allspice. Cover; cook over low heat 45 minutes or until tender. Stir now and then. Add peaches and cherries; beat. Makes 4 to 6 servings.
TRAPPED SIX HOURS IN REFRIGERATOR—Roy Bailey, 4, is treated on a table in a Flint, Mich., doctor's office after being found in an abandoned refrigerator, in which he had been trapped six hours. With the boy are his mother. Pauline Bailey, 27. and his grandfather. John Remore. 53, who found him. Police theorize the old rubber sealing around the door was defective, permitting air in to keep Roy alive.
