Strawberry Treat

No one need feel sorry for the person on a low-fat, lowcalorie diet when he can enjoy a dessert as delectable as the one shown here ... Fresh Strawberry Dessert Sauce over fruitflavored sherbet. This marvelous sauce costs the dieter just 5 calories per tablespoon as compared with 37 calories had it been sweetened with sugar instead of the non-caloric sweetener, Sucaryl, used here. This recipe is a sample of the more than 300 low-fat, lowcalorie treats to be found in an intriguing new diet book by Helen Belinke, “The Low-Fat Cookbook for Gourmets” (David M^Kay: $4.95). Mrs. Belinke is an old hand at the art of calorie cutting, having previously authored “The Gourmet in the LowCalorie Kitchen.” The fat-reduced, calorie-stripped culinary triumphs in her new cookbook have been accomplished through “minor miracles in substitution.” Mrs. Belinke uses fats of the polyunsaturated type, skim milk instead of whole milk, and the calorie-free sweetener in place of sugar. The author warns, “Don’t deny yourself or your family the sweets they look forward to at the end of the meal. They can cost you practically nothing in the way of cholesterol, and (can be) controlled in calories as well.” Here is Mrs. Belinke’s recipe: Fresh Strawberry Dessert Sauce Makes 1% cups Calories per tablespoon—3 Milligrams Cholesterol per tablespoon—0 1 pint fresh strawberries, 2 tablespoons liquid Sucaryl washed, hulled and halved 1 teaspoon lemon juice Put all ingredients in container of electric blender.
