The wise men hurriedly packed their finest gifts on their camels and embarked upon their journey to Bethlehem to see the Christ Child. It took qiany days before they arrived in Bethlehem. But in tucking in the unexpected, adding the note which was nonsense, as he has done here, Hieronymus Bosch was unsurpassed. In this painting he seems to be drawn by kaleidoscopic dreams to hurry on from the Magi's brisk egret feather to the plants in the walls, to the filigree of the Virgin’s hair. His light handling of paint has the transparency of stained glass and the interweaving of dreams adds fantasy. Angels, while watching from on high, hold up a billowing canopy as a roof. The inn is not just an abandoned castle, but a spacious, patterned ruin. The shepherds not only look in the window, but absentmindedly vvaim their hands at a fire. The medieval world knew these men well, “of whom the names be written. ... in Latin, Jaspe.r, Melchior and Balthasar.’ Artists seized upon the opportunity to paint them with gold and glorious color. THESE THREE VARIETIES of Brioche are dcceptive! They look difficult to make—but are actually quite simple. The basic yeast dough requires no kneading. The shapes take but minutes to form. French Rolls Are Easy to Make
According to French tradition, the popular continental breakfast consists of juice or fruit, coffee and rolls. The menu sounds simple, but, oh what rolls! The delicate French Brioche is indeed queen of the continental breakfast. It is a yeast-raised bread, rich and tender, flaky to the touch, and tempting to the palate. We are most familiar with brioche shaped with sloping sides and a tiny ball or "top hat’’ on top. But, the dough lends itself to any number of interesting shapes. Novice bakers will find each variety simple to do, for the basic dough is batter, refrigerator type. All you do is beat it— then chill it overnight. There’s no kneading necessary! BRIOCHE VARIETIES <4 Brioche Dough: 1/4 cup milk \\ cup warm water (105** 115^.) 1 package or cake Fleisch* mann’s Yeast, active dry or compressed Is cup sugar 1/4 teaspoon sail

1 egg yolk 1 teaspoon grated lemoo
peel
2 cups unsifted -flour
1 egg white
Scald milk; cool to lukewarm. Measure warm water into large warm bowl; sprinkle or crumble in Fleischmann’s Yeast; stir until dissolved. Stir in sugar, salt, soft Fleischmann’s Margarine, egg, egg yolk, lemon peel, and unsifted flour. Beat until thoroughly blended. Cover. Let rise in warm place, free from draft, until doubled in bulk, about 1 hour. Covet; tightly with aluminum foil. Refrigerate overnight. Reserve egg white for brushing
dough before baking.
Turn dough out onto well floured board. Proceed as for any
variation given below.
Luncheon Braid Makes 1 large braid
Divide dough into 3 equal pieces. Roll each piece out into
a roll 20-inches long. Place the 3 rolls on a large greased baking sheet and form into a braid. Seal ends together and tuck under , braid. Cover. Let rise in warm place, free from draft, until ; doubled in bulk, about 1 hour. Gently brush braid with light- | ly beaten egg white. Bake in | moderate oven (375°F) about 15 to 20 minutes or until done. Creole Style Brioche Makes 12 rolls Form dough into a roll 12- ■; Inches long; cut into 12 equal pieces. Shape each piece into a roll 6-inches long with tapered ends. Place on greased baking sheets. With a sharp knife make a cut 3-inches long and 14-inch deep lengthwise down the center of each strip. Cover. Let rise in warm place, free from draft, until doubled in bulk, about I
; hour.
Gently brush rolls with lightgj ly beaten egg white. Bake in moderate oven (375°F.) about 12 to 15 minutes, or until done.
Small Traditional Brioche
Makes 18 individual brioche Divide dough into 2 pieces, one about % weight of dough and the other about Vz weight of dough. Cut larger piece into 18 equal pieces; form into smooth balls. Place in well greased muffin pans or tart pans. Cut smaller piece into 18 equal pieces; form into smooth balls. With floured finger make a deep indentation in center of each large ball. Press a small ball into each indentation. Cover. Let rise in warm place, free from draft, until doubled in bulk, about I hour. Gently brush brioche with lightly beaten egg white. Bake in moderate oven (375°F.) about 12 to 15 minutes, or until done*
Large Traditional Brioche Makes 1 large brioche
Place dough in a large, well greased brioche mold. The mold should have a large circular bot* tom (about 5Vi-inches in diameter) and flaring fluted sides with a depth of 3-inches. Cover; let rise in warm place, free from draft, until doubled in bulk,
about 1 hour.
Bake in moderate oven (350° F.) about 40 minutes or until
done.
Unmold and cool. If desired frost with confectioners’ sugar icing and decorate with nuts. Cut in wedges and serve as tea bread.
