This Broiled Apple Crunch is an extremist. Its lemony apple sauce and brown sugar nut flavors show off best when the Crunch is served either broiler hot or frigid cold. Put a dip of ice cream on it hot, and the cream promptly softens adding its own rich creaminess to the doings. Put a dip on it cold and you have a crisp a la mode dessert. What gives this dessert its lively apple tang is canned apple sauce spiked with grated lemon rind. On top goes a thick crumble of walnuts, brown sugar, cracker crumbs and butter. Then instead of baking, you slide the dish under the broiler. When you taste it, you’ll know why . . . the broiling increases the crisp nut crunchiness of the topping and brings out the fragrant apple tang of the apple sauce below. (Also, how little time it takes!) 4 cups canned apple sauce % cup chopped walnuts 1 tablespoon grated lemon Dash salt rind 2 tablespoons soft butter or % cup brown sugar margarine % cup graham cracker crumbs Vanilla ice cream Spread apple sauce in a greased shallow casserole; stir in lemon rind. Blend remaining ingredients and sprinkle evenly over apple sauce. Broil about 5 minutes until top is almost scorched and apple sauce is heated through; serve very hot or very cold. This is good plain and absolutely delicious with rich vanilla ice cream. Makes 6-8 servings. Variation: If pudding is to be served hot, you might add a generous sprinkle of nutmeg, cinnamon or ginger, for a spicy flavor.
