WHEN CAULIFLOWER IS A GOOD BUY Cauliflower is a good buy right now in a good many pa rts °f country. In fact, one middle-western newspaper is even offering prixes for the best cauliflower recipes submitted by its readers. This started me thinking about my favorite cauliflower recipe . . . not that I meant to submit it ... I simply found myself hungry for the taste of these tender delicately flavored flowerets enriched with browned butter sauce and crispy brown buttery crumbs. Doesn t that sound like a distinctive and different vegetable dish well-deserving of its swanky-sounding name . . “Cauliflower Au Beurre .

Hints On Cooking Strong-Flavored Vegetables But before I give you the recipe, let’s discuss the general principles of cooking this vegetable which has been referred to as “( a Image with a College Education”. For cauliflower does belong to the family of strong-flavored vegetables which includes cabbage, turnips, brussels sprouts and broccoli. All of them are ruined . . . both in color and flavor ... by too long cooking. POSSIBLE TIME! Cook JUST UNTIL TENDER! Drain at once when done . . . and save the water to use and sauces. Many minerals and vitamins are in that water. That s why it is too valuable to throw away. Add Salt While Cooking One to 1 */4 teaspoons of salt may be added to each quart of the water during the boiling period. WHEN IT COMES TO CAULIFUIWER In buying cauliflower, choose white heads with fresh green leaves. Turn your back on yellowish-looking head: with withered leaves. Remove the leaves, cut off the shilk and soak 30 minutes (head down) in cold salted water. Separate into flowerets and cook * to 10 minutea. Or if you wish to cook your cauliflower whole ... it will require 20 minutes. Serve Cauliflower With— Drain and serve with: Melted llutler . . . White Sauce ... nr Hollandaise Sauce. A whole cauliflower i delicious sprinkled with grated cheese and paprika and served on a hot platter. CAULIFLOWER AU HKURRE Place cooked cauliflower on a hot serving platter . . . with the floweret side up. Pour browned buttered crumbs over it To make the crumbs . . . allow butter to brown delicately over low heat. Add fine dry bread crumbs, and stir until nicely browned. What Goes With Cauliflower Au Beurre The next question is . . . what sort of a menu shall we plan to Include our Cauliflower Au Beurre? W'hat goes well with cauliflower?
