The climax of 4-H club work for ho current calendar year, and the start of the work for the coming year is embodied in the meeting to be held in the assembly room of the C.mrt House in Greencastlc at 7:30 he evening of Tuesday, November 19. At the gathering approximately 200 4-H club members in the county ■’•’ill receive public recognition of heir achievements in work of that >rganizatlon. James Robert Nichols, president of he Junior "Leaders' organization he county, will preside. Medals and Mher awards will be presented to !-H club members and leaders over he county. SCINTILLATING SALAD FOR SUNDAY Though our mothers perhaps didn’t cook with the same scientific precision it is possible for us to use today, we can learn a trick or two from them about preparing the family’s food for a week-end. Almost everyone can remember the colorful jellied aspic salads crammed with crisp, tangy-flavored vegetables. They were prepared in advance, then removed from the old-fashioned ice box and unmolded in all their shimmering, jewel-like glory just before time to serve the

“company”.

The old-fashioned jellied aspic fits wonderfully into the modem scheme when we want to have everything ready for supper in double quick time and at the same time surprise everyone with a down-home treat. Here is the recipe with which to do it—using the same clear broth, pure cider vinegar, fresh cucumber pickle, Worcestershire sauce and crisp vegetables that made mother’s taste so extra good. Consomme Aspic Soak two teaspoons plain gelatin for five minutes in one-fourth cup consomme from a medium can (two *ups) consommo or consomme Madrilene. Heat remaining consomme to boiling point, then pour over gelatin and stir until dissolved. Add one teaspoon Worchesterhire sauce and 1 tablespoon pure cider vinegar. Chill partially, then add two or three cups of any of the following combinations: (1) chopped celery, diced cooked chicken and Stuffed Spanish oflves, sliced; (2) chopped celery, flaked cooked tuna fish and stuffed Spanish olives, sliced; (3) chopped cabbage, green pepper, fresh cucumber pickle, celery and pimiento. Continue chilling until firm. Unmold on beds of lettuce or watercress and garnish with mayonnaise.
