Honey Currant Rolls

“The king was in his counting house Counting out his money— The queen was in the parlor Eating bread and honey.” A MODERN queen, or king, who enjoys “eating bread and honey,” will appreciate the delights of a panful of hot Honey Currant Rolls. The glistening honey topping and the currants peeping from plump sides promise royal eating. Made like any biscuit,except that the dough contains a bit of sugar and an egg for extra goodness, the dough is rolled out flat, brushed with melted butter and sprinkled with currants. If currants are not handy, raisins will do nicely. So Will chopped dates. After the dough iswrapped jelly-roll fashion around the plump fruit, it is spread with the honey topping. The oven does the rest. HONEY CURRANT ROLLS 2 cups sifted flour 3 teaspoons baking powder ? 4 teaspoon salt 1 tablespoon sugar 2 to 4 tablespoons shortening 2 caas

cup milk Melted butter Y\ cup currants, raisins, or chopped dates Honey Topping Sift together flour, baking powder, salt, and sugar. Cut in shortening. Beat 1 whole egg and 1 egg yolk, saving 1 white for topping. Add milk to beaten eggs, and add all to dry ingredients. Stir only enough to make dough hold together. Turn out on lightly floured board and knead a half minute. Roll out’j inch thick and cut in strips three inches wide. Brush with melted butter and sprinkle with currants. Roll lengthwise. Cut in 2' inch lengths. Place close together in ungreased bakingpan. Spread Honey Topping over rolls. Bake in moderately hot oven (400 C F.) 20 minutes. Yield: about 14 rolls. HONEY TOPPING cup butter cup confectioners’ sugar 1 egg white 2 tablespoons honey, warmed Cream all ingredients together and spread over rolls before bakinir.
