Feeding An Army Requires Many Different Skills Feeding the Army involves not only the cooking and serving of food. It involves bread and pastry baking, meat cutting and fat rendering. The planning, coordination and over-all supervision of these activities, which may service thousands of troops in one establishment, requires specialized management skills. “Mess” In Army language, 'mess'' means a group or organization whose members eat together, and mess halls are the Army's dining halls. Some of these 1000 or more (consolidated mess), while others serve smaller unit groups (the standard for the unit mess is 200). In every mess, however, the food is of the same variety and quality, prepared by specially trained and skilled personnel. In many of the Army's larger posts, bread and pastry are baked in large central plants, like commercial bakeries which serve the civilian population. These plants are equipped with the most modern machinery, and their personnel are thoroughly trained in this special activity. Mobile bakery units, highly mechanized, operate to serve troops in the field. How Meat Is Procured The Army procures its meat in whole carcasses. Whenever possible these carcasses are boned and cut into small table cuts for kitchen use in Central Meat Cutting Plants. In addition, sea food and fowl are processed for mess hall use. In these plants meat is processed on a large scale basis, using methods worked out in cooperation with leading civilian meat packers. Mobile butchery units accompany troops in. the field. In garrison, cooks, bakers and meat cutters work in well-plan-ned plants, maintained under the most sanitary conditions. Kitchen and oven heat, are, of course, occupational conditions, and meat cutters move in and out of cold storage facilities. In the field food service personnel live under the same conditions as .other troops. Tents constitute their usual shelter, and gasoline, coal and wood their fuel. The cook in the combat unit shares the same exposure as his fighting comrades, digs in like them, and frequently may fight at their side. Career In Food Service An interest in the preparation of food, and the service of food is highly desirable in a person seeking a Career in Food Service, and a high standard of personal cleanliness is a necessity. Ability to learn menu planning, and careful measuring of quantities, and to coordinate one’s efforts with others is necessary. No unusual phy-

Special Training After the basic training that every’ soldier gets, men selected for this field may go o n to specialized training in the specialties of this field at a Replacement Training Center. They may go directly to units where similar special training is given on-the-job. Besides/ service schools for both entrance and advanced food service specialties are located in ill six Army areas, and at certain overseas installations. Men are constantly sent to these schools to increase their skills and prepare them for promotion. Many technical manuals are available for study, and United States Armed Forces Institute offers many courses which are useful both for advancement in the Army, and for future use in civilian life.
