Sources of Vitamin There are excellent sources of vitamin C on the produce stands and in freezer cabinets. In general, citrus fruits, leafy green vegetables, and potatoes are among the best sources . . . and many times the least expensive. Fresh berries, tomatoes, and Bell peppers are fine sources. Small amounts of vitamin C are found in some cereal and dairy products. Beef liver is the only meat which contains significant amounts of this nutrient. The vitamin C content of foods varies considerably with the growing conditions, variety, processing methods, and storage con. ditions. In addition, vitamin C is one of the most perishable nutrients. It dissolves in water and oxidizes in the air. Its destruction increases as the temperature rises. Exposure to light also hastens the loss of vitamin C.

With this formidable set of hurdles it might seem that there is little chance of our getting any vitamin C at all! But unless one has very peculiar eating habits, it is almost impossible to avoid receiving at least one-fourth to one-third of an adults’ daily requirements from foods consumed during the day. With a little thought to menu planning there is no excuse for a shortage of vitamin C. The perishable nature of vitamin C does point up the need for a few precautions so as to get the maximum benefit from the foods we purchase. Store these foods at low temperatures in the dark. (For most of them this means refrigeration). Cook at low temperatures with as little water as possible. Eat raw fruits and vegetables when possible. Cut or shred them just before serving.
