Linde Employee ' Savings Distributed A cash distribution of $722,220 under an employee savings plan : in which the company adds as much of 30 per cent of the employees’ savings was made on Monday (July 1) to more than 674 employees of the Speedway and Indianapolis facilities of Linde Company. The employees saved $543,518 of their own money through this plan during the last two years. The balance of $178,702 represents the amount the company added, Fund surplus, and earned interest. Linde Company is a division of Union Carbide Corporation. Under this plan, employees set aside up to 7% per cent of their earnings and the company adds 10, 20, or 30 per cent of this amount, depending on whether the employee has one, two, or three or more years of company service. The plan contains provisions for short-term savings and longrange investments or a combination of both. This flexibility, which is one of the outstanding features of the plan, permits employees to set aside cash for a distribution every two years and also provides the choice of longrange investment in either U. S. Savings Bonds or Union Carbide stock. Savings plans were made available to Union Carbide emloyees as early at 1935. Beef—Top Of The Popularity Poll Tenderness is the main determinant of high quality beef to most people, although flavor also ranks high. The decisions each homemaker faces concerning meat buying each week are (1) how to tell which meat is tender, and (2) how much to pay for it. Tenderness is influenced by the age of the animal, the amount and character of the connective tissue, and the deposition of fat within the muscles, sometimes called “marbling.” Age of the Animal. Meat from young animals is more tender than meat from older animals, other factors being equal. As an animal grows older, its connective tissue increases in amount and becomes tougher. Connective Tissue. Connective tissue literally holds the body together. It contributes to the toughness of meat as is readily understood since tendon or gristle is entirely connective tissue. Exercise, as well as age, increases the amount of connective tissue. This factor gives us the principle of “working” and “holding” muscles. Cuts of beef which come from the extreme front and extreme back of a beef animal are muscles of “motivation” or “working” muscles (heel of round, chuck and arm roast, etc.) and tend to be less tender than those muscles which come from the center of the animal and do not receive much exercise. These are termed ■“holding” muscles since they merely “hold” the animal together. Examples of these holding muscles are porter-house, rib, and sirloin steaks. Marbling. “Marbling” is the very fine net-work of fat that is intermingled within the lean of meat. When meat is cooked, this fat dissolves, leaving the lean meat in very tiny particles. The more marbling there is, the more the lean structure will be divided and the more tender the cut of beef will be. In cooking the tender cuts — Rib roast, Sirloin tip roast, T-bone steaks you either roast or broil them. But in cooking the less tender cuts—Round, pot roast, flank steak etc. you cook longer with added liquid such as Round Steak Cantonese. A thick cut is elegant cooked Cantonese-style. After browning the round steak, add soy sauce; ground ginger; chopped green pepper, onion, and celery; whole button mushrooms; and the , mushroom liquid and water if needed. Cover and simmer 2 to 2% hours, or until the steak is fork-tender. Thicken the well-sea-soned sauce in the pan with cornstarch to serve with the tender, flavorful steak.
