Ruby Fruit 1 can (1 lb. 14 oz.) fruit cocktail 2 envelopes plain gelatin 1 can (6 oz.) frozen pineappleraspberry drink % cup water Ya cup lemon juice Dash of salt Drain fruit cocktail, saving syrup. Soften gelatin in % cup syrup and dissolve over hot water. Remove from heat; blend in remaining syrup, pineapple-rasp-berry drink, water, lemon juice and salt. Cool and turn into 8 or 9-inch square pan. Chill until firm. Cut into 1-inch squares and serve in icers or compotes as appetizers; or cut into larger squares or rectangles for salad or dessert. Makes 8 to 10 appetizers. 6 to 8 salads or desserts. New Food Display The use of liquid nitrogent offers some new possibilities in cutting cost of zero-and-below transportation of frozen foods. Liquid nitrogen is a by-product of liquid oxygen, which is being used for rocket fuel. It is becoming inexpensive enough to make its economical for keeping food at low temperatures. Liquid nitrogen has a constant temperature of 320° below zero Fahrenheit. It has been in use for about three years in transportation of frozen foods between New York and Bermuda.
