Perfect Accompaniment Fruit Fruit is an ideal meat and main dish accompaniment. Apple sauce with pork; cranberry relish with turkey; stewed white grapes with chicken; cherries or orange with duckling; lemony garnishes with seafood—thess. are famous flavormates. In combining fresh fruits with meats or other main dishes we lend the excitment of contrast to the menu. The attractive color of fruits makes the golden brown of cooked meats more appealing. The start-sweetness of fruits cuts the fatty richness of main dishes and since fruits are low in calories a liberal serving of fruits lowers the calorie value of the whole meat. From the test kitchens of the United Fresh Fruit and Vegetable Association comes this appetizing recipe for a fresh fruit accompaniment. While apple sauce is delicious, at times you might like to serve Apples au Gratin with pork or poultry. APPLES AU GRATIN 4 cups (4 medium) thinly slice apples 1 tablespoon fresh lemon juice % cup soft bread crumbs 1% cups grated American cheese % teaspoon salt % cup butter or margarine, melted 1 cup soft bread crumbs Combine apples and lemon

juice. Mix the L 4 cup bread crumbs, cheese and salt. Fill a 6cup buttered casserole with alternating layers of apples and cheese mixtures, beginning and ending with apples. Combine melted butter or margarine and mix well with the one cup soft bread crumbs. Sprinkle over apples. Bake in a preheated moderate oven (350 degrees F.) 40 minutes or until apples are tender and crumbs are brown.
