Pick The Turkey To Suit Your Family Whatever the size of your family, there’s a turkey just the right size. So don’t wait until Thanksgiving or Christmas to put turkey on your dinner table. Right now, turkeys are plentiful and inexpensive. This year’s crop, according to the U. S. Department of Agriculture’s Crop Reporting Service, will be 26 percent larger than a year ago. Prices at retail are at a record low. If your family is small, try a turkey “fryer-roaster.” It’s a young bird—3 to 4 months old—and will run about 3 to 8 pounds. You can fry it or broil it. Or, it can be stuffed and roasted. Whatever your preference. For the middle-size family, select a middle-size bird. You can

get roasting-age hens anywhere from 5 to 15 pounds. Figure % pound per serving. Usually, the bigger the bird, the cheaper the price per pound. So why not buy a large turkey and invite company in. Broad Breasted Bronze and the new large Whites come in ready-to-cook weights up to 30 pounds. Hens average 10 to 15 pounds; tom, 16 to 24. Another way to take advantage of the economy prices for large birds is to have one split. Cook half of it now; freeze the other half. The meat department of your supermarket will cut your turkey down the middle to make a half turkey roast of from 7 to 12 pounds. At the dinner table, this will be 15 to 25 servings. You also may find turkey parts on the market this year. These will cost you a little more per

pound than whole turkeys. But if your family will eat only white meat—or dark meet —it may be cheaper to select just the pieces they like. There’s another advantage, too. There won’t be any leftovers. YWCA Roundtable The Indiana State YWCA Roundtable is held in the spring and fall of each year, where the staff of the fifteen YWCAs of the state of Indiana meet together for a two-day work session. This year, they will be meeting at the Indiana University Medical Center Student Union Building, here in Indianapolis, on Thursday, November 9 and Friday, November 10. They are inviting the Presidents of each Association and the Public Affairs Chairmen to meet with them.

A Dinner Menu To Please The Family The family will think they’re having a ball . . . when you call them to a dinner of Pineapple Squash Balls and Sausage. This dish is so colorful and is most satisfying made with sausage with the just right seasoning. A well known brand is your guide in buying pure pork sausage of high quality protein that provides real meat power. And for this dish buy the sausage links. Place them in a shallow baking dish and bake the sausage in a hot oven of 400 degrees for about 15 minutes. At the end of this time . . . remove the pan from the oven and pour off the drippings. Turn the saursage and push it to one end of the pan ... to make room for the squash balls. Now to make the balls .. . season cooked squash with a little brown sugar and melted butter. Add some drained canned pineapple tidbits and form the mixture into small balls. Roll each squash ball in crushed cornflakes. Then place the balls in the pan with the sausage. Return the pan to the oven and bake for another 10 to 15 minutes. You might complete the menu by serving the Pineapple Squash Balls and Sausage with Italian green beans seasoned with prepared mustard and butter . . . apple salad . . . and hot biscuits. Then for dessert, top the feast with brownies a la mode.
The Price Of Steak If you ever wonder why you pay a dollar a pound for steak when cattle is selling for 25 cents per pound, you may be interested in this explanation. The Economic Research Service of USDA, explains the difference between on-the-hoof and on-the hook price this way: Nature doesn’t make many choice cuts or top grades of beef. Less than four percent of a steer is sirloin steak; only a little more than half is meat. A side of beef also includes stew meat, shanks, shoulder roasts and trimmings. The price you pay at the store for steak, or for any cut of meat, also includes a lot of other costs besides the original price of the animal. Freight, labor, packaging and risk taking all are costs that have increased in recent years and remain fairly stable. These costs do not vary as much as farm prices do; therefore a temporary drop in cattle prices may mean only a small reduction in prices at the meat counter.
