What's On A Soup Label Stop a moment some shopping ■day to explore the names of the vast variety of soups available. Before you try a new one, take advantage of the information that the law requires printed on the can or package. Be a label reader. Note the name of the soup, the ingredient list, and the net weight of the contents of can or package. You will find every ingredient listed, hence a hint of the recipe the canner or packer has used. The ingredient list will read in order of amount from most to least, the predominant one coming first. Often, too, the label gives helpful use tips beyond legal requirements. Canners or packers, for example, will frequently print suggestions for serving or new recipes on the containers. The label also tells the serving volume to expect from the can or package. It tells whether canned or frozen soups are condensed; most but not all such soups are.

It tells the yield to expect from dehydrated soups; yields differ among varieties. Some soups are kosher. This is indicated in words or by symbol. Soups labeled “Kosher—Pareve” have no milk or meat ingredients. Do Your Menus Need Variety? Many European cooks have established reputations for bringing more variety into their meals than we Americans do. Europeans also use variety meats more frequently than we do, and fancy them as delicacies. Wise and budgetminded food shoppers everywhere appreciate the value of these meats liver, kidney, heart, tongue, sweetbreads, and brains. Variety meats are not only low in their cost per pound but they are also economical in another measure. Since they have no bone, excess fat, or skin waste, it is possible to get more servings per pound than from most cuts of meat. You can count on five serv-

ings from a pound of such variety meats as liver, heart, and kidney. Tongue, because of its excess fat and skin waste, is an exception; it yields only three servings per pound. Indiana Bell Installs "Bird Dogs" Indiana Bell is installing electronic “bird dogs” in Indianapolis telephone buildings to sniff out potential line trouble before it happens. Division Manager George K. Kennelly said installation of the new line insulation test equipment started this week in the downtown building. Similar units are beeing installed or will be soon elsewhere in the metropolitan area. The equipment will work mostly at night, checking as many as 6,000 telephone lines an hour. Somewhat like a bird dog sniffing back and forth across a field, it

will survey lines from telephone buildings to the customer’s phone and back again. If abnormal conditions are found, the equipment will record these by teletype. A Bell testman then will follow the “point” and correct the potential trouble long before it could affect a customer’s telephone line. “This new electronic device will replace portable equipment and will make telephone service even more dependable,” Kennelly said. He said this is one of three installation projects starting in the area this week. Total cost will be $436,100. In the CLifford building ait 5870 College, additional dial switching equipment providing 500 more CLifford numbers will be installed. Combined with outside lines, these new facilities will serve new telephone users and make one and two-party service available to present customers on mul-ti-party lines. Additional circuits also are being installed to carry telephone conversations between Indianapolis and suburban communities and between the various telephone buildings and new dial switching equipment which will serve MElrose 4 and 5 phones beginning this spring. All three installation projects are scheduled for completion in May. Kennelly said the line insulation test equipment, like a good bird dog, can be set to hunt for specific things. Moisture in a cable is one of the telephone company’s most troublesome conditions, for example, and the equipment can be set to overlook minor conditions and hunt only for mois-

ture entering a cable. The equipment works by sending out an electrical current over the . lines. An interruption or change in the current is relayed by teletype from the line insulation test frame to a test desk. Bell plans to have the electronic “bird dog” at work in all its major offices around the state during the next two years. How To Prepare Variety Meats Variety meats, like all meats, are cooked according to their tenderness. Calf, lamb, and most beef liver are tender enough to be broiled or pan-fried. Pork liver is best braised. Veal and lamb kidneys may be broiled. Beef and pork kidneys should be cooked in liquid or braised. Heart and tongue need long, slow cooking in moisture. Beef heart, because of

More Than Food In The Grocery Basket When we buy groceries in today’s supermarket, we usually buy household supplies, cigarettes, toilet articles, and other nonfood items. We may even buy clothing. A study by home economists at Purdue University showed that nonfoods made up an average of almost twenty per cent of consumers’ purchases in markets in Lafayette and Indianapolis, Indiana.
