Mental Health Apointment of Mrs. Frank Stanton, 5626 Crittenden, as director of Volunteer Development, was announced today by Norman Skole, executive director of the Marion County Association for Mental Health. Mrs. Stanton will be in charge of recruitment of hospital volunteers, coordinating volunteer programs, and developing increased and more active volunteer programs for the association. A resident of Indianapolis for six years, she has a background in public relations, newspaper and radio work, and was active as a volunteer in the Dayton, Ohio Mental Health Association. Citrus Gold Luscious fresh oranges, tangerines, tangelos and grapefruit will be on hand in large supply to help make the dark months of winter pass more pleasantly. When you shop for citrus fruit choose those that are firm and heavy for their size. Outside color is not a guide to ripeness or quality. Re-greening sometimes occurs on fully ripe fruit. Skin blemishes are only “skin deep” and do not affect the quality, or flavor of the fruit inside. However, avoid fruit with soft spots. There are two general types of oranges those raised for juice and those raised to be sectioned and eaten. Most juice type products are from Florida. They are thin-skinned, have many seeds, and often have a green skin when ripe. Navel oranges, from California, are thick-skinned, seedless and a good dessert orange. The sweet, fragrant Temple orange comes from Florida. It is easily identified by a thin, course grained skin. It will section easily. Generally, you’ll find that you pay more for oranges that are easy to section than for the juice type.

The Advantages . Of Beans One of our very oldest, favorite foods is dry beans. And, no wonder, there are so many advantages in dry beans. \ Good tasting: There is a law requiring bean soup to be on the menu of the U. S. Senate restaurant every day the Senate is in session. If beans weren’t so good, would they be the only food so honored? Highly Nutritious: Dry beans are among the best sources of protein, iron, 2 B vitamins, thiamine, and riboflavin. Beans are a good meat substitute, especially when served at the same meal with a protein rich food such as milk, cheese, or eggs. Easy to Prepare: No cutting, no peeling, no waste. Sometimes it is convenient to soak them overnight. A short cut method of cooking is: Sort and wash beans. Boil beans in 2% to 3 times as much water as beans for 2 minutes. Remove them from heat and let soak for one hour. Bring water used for soaking to a boil, add 1 teaspoon salt for each cup of dry beans. Use less salt if salted meat is used for seasoning. Add water as necessary to prevent sticking or scorching. Beans will be tender in % to 2 hours depending on variety. Beans more than a year old take longer to cook. Do not add seasonings until beans are nearly done since acids delay softening. Easy to Serve: Beans are good “as is” or served with a large array of sauces, relishes, catsups, vegetables, and meats. Beans can be baked, put in salads, and used in soups, chili-con-carne, even in sandwich fillings. Cook a lot at one time, you’ll find many uses for them. Easy on the Budget: A pound of dry beans equals about 2 cups or nine servings. Very few varieties of dry beans sell for more

The meeting, held on the third Wednesday of each month, also featured a talk by Tommy Waddleton, Indianapolis Star Magazine cover photographer, on “How to Improve Your Ski Pictures.” Miss Tina Brazil and Dick LeCren announce that arrangements have been made for a bus load of skiers to journey to Cadillac, Michigan on January 22 for a weekend of skiing at the Midwest ski capitol of Caberfae.
