Co-operative Extension Work It's a Peach Yes, the loveliest peaches deserve to be noticed. But what do you need to notice when buying peaches? The blush on the peach is eye-appealing, but when selecting note the background color as well as the blush. A yellowish or whitish ground color denotes a mature fruit. A green or greenish-yellow background color is the sign of immature fruit—no matter how attractive the blush. Sound peaches are

Headaches Are No Strangers Is there anybody you know who has never had a headache? Such people are hard to find. Some of us get them rarely, some frequently. Eight out of a hundred Americans get headaches regularly. Almost nobody can say headache is a stranger. You might get an occasional headache from almost any upset a cold, sinus trouble, a toothache, eyestrain, an upset stomach, lack of sleep, bad dreams, not eating, drinking too much, stuffy rooms, sticky weather, noise, and just general confusion. For relief, try the old standbys—aspirin, coffee, and fresh air. The headache unit at Montefiore Hospital in New York likes to call the usual kind of headache “tension headache.” It is tied in, the New York doctors say, with constant or periodic
firm or fairly firm with freshlooking skin. A delightful dessert from peaches is the No-Bake Peach Crisp. Stir 1 cup of brown sugar, 3 tablespoons butter or margarine, and % teaspoon salt together in a large saucepan over low heat until bubbling. Add three cups crisp rice cereal or com flakes and % cup chopped walnuts; mix well. Let the crumbly mixture cool in the pan. Sprinkle generously over sliced and sugared fresh peaches or other summer fruits. Serve with cream or ice cream, if desired.
emotional conflict. Aspirin will help, and so will any method of relaxing the muscles, such as massage, hot packs, or soaking in a warm tub. But for prevention, working out your emotional problems with your family doctor is recommended. Formal psychotherapy is generally not necessary. Another 5 or 10 out of a hundred headaches are migraine or “sick headaches.” A migraine headache may begin with a dull or tired feeling, irritability, and difficulty in concentration. There may be a dizzying flash and nausea or actual vomiting. Often the only thing to do is to lie down. Aspirin does not help; much stronger remedies are usually perscribed. Pain in the head may sometimes mean serious disease. All headaches mean time out from work and fun. If they persist, see your family doctor. Meanwhile, try to modify your day-to-day living to lessen your tension.
Everyone will want the recipe. A Chai About Pork and Pork Prices Usually the month of July is the month of seasonally scarce pork supplies. Generally speaking, says Dorothy Messerschmidt, consume foods agent for Marion County, there will be no particular pinch in pork supplies this summer. Producers have something like 12-15 percent more pigs ready for the meat packers —compared to last summer. More pork is in cold storage than there was a year ago. Prices on pork, she reports,,
How To Choose A Cantelope Dorothy Messerschmidt, Marion County Consumer Foods Agent, gives these suggestions on selecting a cantaloupe. 1. The netting should stand out over the entire surface. Even, smooth, well raised netting with yellow coloring under the netting is a good sign of quality. 2. Buy a melon that is heavy for its size. 3. Smell the melon. A fragrant odor denotes ripeness. 4. Remember that a soft blossom end is no indication of ripeness. Maybe a number of other customers have been poking at the blossom end and it will just appear soft to you. 5. When cantaloupes are ready to harvest, the melon will separate cleanly from the vine, leaving a smooth, slightly sunken scar at the stem end. 6. Another point to remember is that the sugar content doesn’t

will average about 10 percent lower than last summer. You may have noticed some pork price increases on some cuts, but in general, the increased price per pound on pork cuts is less as compared to prices generally paid during summer-time months. What About Refreezing? For highest quality, keep frozen foods frozen until they are defrosted for use is the recommendation of Dorothy Messerschmidt, Purdue consumer foods agent for Marion County. Thawing and refreezing does not make fruits or vegetables un-

increase after the melon has been picked. So, if you want a sweet melon, choose a ripe one. News In Frozen Food When you see frozen cream pies and foods in a cream sauce in the frozen foods section at the grocery, it would seem logical that you could freeze your own. However, if you try to freeze a cream pie or a food with a cream sauce, it will most likely separate and curdle after it is taken from the freezer and is thawed. The commercially frozen cream sauces do not separate. The reason for this is that a waxy rice flour is being used commercially to thicken sauces and gravies. As a result, it will mean many more new frozen pre-cooked foods at th? grocery store. So far, this flour is not available at the retail level so that homemakers cannot freeze their own cream sauces.
safe, but thawed foods spoil more rapidly than fresh foods, and may become unsafe to eat unless refrigerated. Both fruits and vegetables may be refrozen if they have not completely thawed, but the thawing and refreezing will result in a poorer quality and loss of flavor. Refrozen vegetables are apt to toughen. Refrozen fruits become soft and mushy. Time for the "Blues"
July is the time for blueberries to apear on the market. Over half the supply appears this month. And Dorothy Messerschmidt, Marion County consumer foods agent for Purdue University, reports blueberries are bigger and juicer these days. Scientists of the U.S. Department of Agriculture are working on still bigger and better berries. But in the meantime, when shopping for blueberries remember these tips. Size is no indication of flavor. Size is based on the number of berries required to fill a half pint measure. The four main sizes are 90 or less 90-130, 130-190 and 190 and over. Ripeness is indicated by the color which may be light blue to dark blue or blue-black. They may be covered with more or less bloom, depending on the variety. Blue berries are highly perishable and should be used as soon as possible. Do not wash them until just before using since the moisture hastens breakdown, mold, and will draw out juice. For pie making, allow 2% cups (IV4 pints) of fresh berries. One quart of berries will fill 1% to 2 12-ounce packages for freezing. For jam or jelly-making one quart of berries will make two to four 6-ounce glasses, depending on the recipe. From A Can Of Frozen Lemonade It’s the time of year when the supply of frozen concentrated lemonade is one of the items to check when writing the grocery list. Did you know that frozen concentrated lemonade also makes delicious desserts? Dorothy Messerschmidt, Marion County Consumer Foods Agent for the Purdue Agricultural Extension Service offers this recipe for a delicious chiffon pie made with lemonade frozen concentrate. FROZEN LEMONADE CHIFFON PIE Filling 1 6 oz. can frozen concentrated lemonade 1 cup waiter 1 envelope unflavored gelatine ¥4 tsp. salt 2 egg yolks, beaten 2 egg whites, beaten 2 tablespoons sugar Let can of frozen concentrate stand at room temperature to soften—about an hour—or place in bowl of warm water about 10Meanwhile measure water, unflavored gelatine, and salt into top part of double boiler. Place over hot water and stir until gelatine is dissolved. Beat egS yolks in bowl and stir hot water and gelatine mixture into them. Return mixture to top part of double boiler and continue cooking. Cook while stirring constantly until mixture forms thin layer on metal spoon. Stir in frozen lemonade and chill in refrigerator until slightly thickened. Beat egg whites until stiff, but not dry, then beat in sugar until whites stand in soft peaks. Stir this meringue into thickened lemonade mixture. Chill again until almost jelled; then pile into graham cracker crust and chill two hours or until firm. Serve with whipped cream topping if desired.
