2,466 Salad Dressings Yes, that’s the number of salad dressings commercially produced in the United States, according to the U.S. Department of Agriculture. Narrowing it down still more, we find mayonnaise accounts for 690, salad dressing for 668, French dressing for 362, and all other dressings for 746. Maybe you wonder what the difference is between mayonnaise and salad dressing. Dorothy Messerschmidt, Consumer Education Agent for Purdue Agricultural Extension Service, states that the difference is the larger percentage of vegetable oil used in mayonnaise. The Federal Food and Drug Act defines mayonnaise as containing at least 65 percent vegetable oil, by weight. The law defines salad dressing as composed of vegetable oil at least 30 percent by weight. Also contains either the whole egg or an egg yolk, whereas salad dressing has egg yolk ingredient equivalent to at least 4 percent by weight to liquid egg yolks. So the next time you shop for mayonnaise or salad dressing check the label and you’ll understand why mayonnaise costs

To Be, Or Not To Be Refrigerated If you ask whether your catsup should be refrigerated you can know you’re not alone. Many homemakers wonder about this. If your family uses lots of catsup, there’s no need to refrigerate the bottle after is has been opened. Kept at room temperature, it will pour easier. Added to that, it will not cool the food on which it is used. However, if you use the catsup just occasionally, and the bottle is apt to be around the house for long periods of time, it is safest to store it in the refrigerator. The familiar “X” marks the spot of railway-road Intersections, but throughout Indiana train-car crashes have changed the sign to a ghastly skull and crossbones. **X” marks the spot where 97 persons crashed to their deaths against tons of rolling steel in 1957.
