Pannentier Pancakes Boil three potatoes in salt water and mash them. Add milk and let the whole cool. Then add two tablespoonfuls of flour, and one by one add six eggs. Next mix gently three spoonfuls of thick fresh cream, and mix until all is cream-like. Use a flat frying-pan, in which melt a good dab of butter, as for an omelette. When very hot, put in the paste, threequarters of a tablespoon at a time. The paste will make a small pancake, which is browned on both sides.
