Oven-baked desserts can be cooked along with the roast to save time and fuel. Banana-Cojfee Souflle, one of these. Is nourishing and flavorful. Melt 2 tbsp, butter in a saucepan. Remove from heat and stir In 3 tbsp. ‘ four. Gradually add % cup strong coffee, % cup milk and cook over low simmer flame stirring constantly until nicely smooth and thick. Combine % cup sugar, 4 egg yolks, gradually stirring these into cooked mixture. Add 3 masked medium-sized bananas. Beat 4 egg whites until stiff but not dry. Fold into banana mixture. Pour into 1% Qt souffld dish which has been buttered on bottom only. Bake in slow gas oven (325 s ) 40 to 45 mins. Serves 6. * * * The most reliable buyer’s guide to gas appliances for the home is the Seal of Approval of the American Gas Association Testing Laboratories. For example, nearly 600 tests and requirements must be met on a gas range before it can be produced and sold to the homemaker. * * • If your biscuits bum on the bottom and still remain rather pale on top, your baking sheet may be too large which tends to hold the heat from the burner to the bottom instead of radiating around the oven evenly. There should be at least one inch of space between the baking sheets and all four sides of the oven. • • • Hot butter and syrup makes a richertasting spread for waffles. Add 2 tbsp, butter to 1 cup extrasweet com syrup, heat until butter is melted, then serve hot • ♦ • As soon as baked potatoes are cooked, cut them criss-cross on the top to keep them fluffy. THE FRENCH Government would like very much to get 600 new dwelling units put up in Paris, for Paris is home to nearly 3.000,000 Frenchmen. Paris is terribly overcrowded. This fabulous city would like to have room for tourists and visitors, too. But, unfortunately, France is a country where the government “controls" things, and things are in a snarl. .Housing is one thing controlled by the government. Housing, alas, is in a snarl. To build 500 units of “public” housing, the government would have to have money. But the national budget is already loaded down, in Franch, there are salaries of multitudes of government employees, there are pensions, and there are numerous other things the government is doing for the people. All these things cost money. In fact, costs to the government of France are legion. The government figured it could run things properly, and it is still spending. Enterprise BUT. ALAS, the Deceased. money for the needed 500 units cannot be found. Well, why does not free enterprise do it? In France there is hardly such a thing as free and private enterprise. The government, you see. has made laws against this and that. It is still all right to own property, hut it is getting mighty unpopular. Even so, a group of property owners has proposed to build some rental housing, if the government will let them. These private owners have asked t.o build this housing on a nonl>rotit'basis, without any return in investment, if the government wdl permit them to collect rents to cover maintenance and depreciation This is the kind of situation that exists in a country

where government management is the oraer of the day. In France, a man spends three times as much a year for his pipe tobacco as he does for his nouse rent. (Tobacco is plentiful, but houses are scarce.) Freedom IN FACT, rents are to Build cheap in France. But then, you see, everything is in a snarl. Housing and rentals of all kinds are shrinking to the vanishing point. Rent is very well controlled. The average worker is said to be paying from 1 to 2 per cent of his annual wages for rent. Even a well - to - do family that makes about $5,000 a year, pays only $45 a year for five rooms and bath. Their bill for tobacco is likely to run higher! f Of course, there isn’t much housing, and not likely to be much more. The government cannot build, because it cannot afford the costs. Private interests cannot build, because the government will not let them. Moreover. nobody wants to build. Anyone who owns property, especially property for rent, is looked upon with suspicion. It is said that property owners who rent are popularly known as “vultures.” The joy of owning a cottage is fading away. < I am glad things are not that way in America. America is blest with a system that makes possible the highest living standards known to man. Our system lets each one of us work as hard as we please to make our dreams come true. We do not depend upon hand-outs from the State, nor do we wait for government to build us houses. In fact, a public housing bill, if passed by Congress, would do much to take us downhill—the way France has gone.
