Meat Stew With Dumplings Broadcast: January 5, 1946

IVi cups sliced carrots 1 cup sifted, allpurpose flour 2 teaspoons baking powder 1 -well-beaten egg % cup Pet Milk % cup water */j cup bran**
1 pound meat* (cut for stew) 3 tablespoons flour 2% teaspoons salt Vs teaspoon pepper 3 tablespoons shortening Vi cup cut-up onion 2Vi cups hot water iVi cups pared, cutup potatoes
Roll meat in mixture of flour, 2 teasp. salt and the pepper. Brown slowly in 2 tablesp. hot shortening. Add onion; brown slowly. Stir in hot water. Cover; cook slowly 45 min. Add potatoes and carrots. Cook 10 min. longer. Sift together 1 cuf flour, baking powder and remaining 3 /4 teasp. salt. Mix together the beaten egg, l A cup milk, remaining 1 tablespoon melted shortening, the water and bran. Add all at once to flour mixture. Mix quickly but thoroughly. Drop by spoonfuls on boiling stew to make 8 dumplings. Cover tightly; cook slowly 20 min. without lifting cover. Remove dumplings to serving dish. Stir in remaining l /z cup milk; heat, but do not boil. Serve with the dumplings. Serves 4. ★ Beef,, veal, lamb or pork can be used. ★★Bran flakes, all or whole bran or wheat bran can be used. Announce New Textbook On First Aid Care Publication of a new textbook on First Aid issued by the American Red Cross has been announced by George Klein, First Aid Chairman for the Indianapolis Chapter. The new book is based on war time experiences and advances in medical science and will take the place of the textbook issued in 1942 and distributed to over 6,000,000 readers. Most important of the many changes in the new textbook are those dealing with first aid care in case of shock, burns, wounds and fractures. Portions of the text dealing with the human body structure, roller bandages, snake bites and eye injuries have been expanded. The 254 page volume is illustrated with new drawings of first aid techniques. \ Mr. Klein announced that with the receipt of the new text book new classes in First Aid will be started at once and that refresher courses will be conducted for those holding Red Cross First Aid certificates at the present time. He pointed out that all certificates are good only for three years from the date of issuance and that many had expired and that it would be necessary to take the refresher course in order to obtain new certificates.
