Set at moderately slow (350°F.). Grease well 4 custard cups or a qt. baking dish. Beat eggs slightly. Add remaining ingredients. Mix thoroughly. Divide among custard cups. Set on baking sheet, or pour into baking dish. Bake on center shelf of oven 30 minutes, or until firm. Turn out of cups and serve at once, garnished with slices of hard-cooked egg if desired, or serve from baking dish. Serves 4. ★You’ll need to cook until tender !4 cup rice in 214 cups boiling water to have I*4 cups cocked drained rice. Coarsely chopped, cooked macaroni or spaghetti can replace rice. ★★Cheese can be omitted if 3 eggs are used instead of 2.

Easy Fish Dinner Scalloped potatoes topped with golden brown fish 4 cups sliced, pared % cup water potatoes 14 cup Pel Milk l'/z tablespoons 1 lb. fish* finely cut onion 14 tablespoon (optional) melted shortening 2 tablespoons flour 2 tablespoons fine, 2 teaspoons salt dry bread crumb. *4 teaspoon pepper Turn on oven; set at moderately slow (350°F.). Grease a 114-qt. baking dish. Combine potatoes and onion. Arrange in dish in layers with mixture of flour, 114 teaspoons salt and half the pepper. Pour over the water. Cover and bake 45 minutes. Remove cover; pour over milk. Arrange fish on top. Sprinkle over fish remaining 14 teaspoon salt and remaining pepper. Top with mixture of shortening and bread crumbs. Bake 25 minutes longer, or until lightly browned. Serves 4. ★Slices of halibut, codfish, haddock, hake, etc., or small, whole fish can be used.
